When I was a kid, we used to go camping at my grandparents’ (on my dad’s side) cabin in Lake George, Canada. I’m using the word camping loosely because the cabin (what we all call The Island because my grandparents’ own the little island that the cabin is on) has electricity and running water, and along with it, a kitchen and bathroom for the full comforts of home – so I realize it isn’t really camping. It was nothing like the cabin that my grandparents’ on my mother’s side had in the Adirondacks, which was the most primitive cabin you can imagine. It was basically just shelter from the elements, but it didn’t really matter; as a kid, I got stuck sleeping outside in a tent shooing away mosquitos, with at least three different roots sticking into my back no matter where I’d put my sleeping bag. There was no electricity or running water (unless you count the stream), and I won’t even talk about the kitchen and bathroom, lol.

Anyway, the good thing about camping – however you like to do it – is that it brings you close to good food.

For example, fishing and fresh seafood are something we absolutely love about camping. There is something truly incredible about going out on a big lake in a small boat with nothing but a fishing pole and some tackle…catching lunch, building a fire, and returning with a full belly, ready for an afternoon of exploring.

Mike and I aren’t really campers these days, but we just got back from a mini getaway at a fully renovated, lakeside 1800’s farmhouse in the Adirondacks. Although we had an amazing time hiking, biking, fishing, and taking in gorgeous mountain views, after seeing the kitchen I didn’t want to leave it. We did a little fishing, but didn’t catch anything much bigger than the cute little minnow-like fish you see me holding above…but no worries, I was prepared!

I recently had the opportunity to sample a new seafood product called Bumble Bee SuperFresh™. The seafood is premium fresh frozen, which means that it was cleaned, cut, and flash-frozen within hours. After trying their seafood, I’m convinced that this is the way to go.

Not only do the products live up to their name when it comes to fresh taste, but they are also wonderfully seasoned…and this is actually the first product of its kind that I’ve seen that is perfectly seasoned as-is without even needing a sprinkle of salt and pepper. I was impressed.

And let’s talk about time, because everyone I know is running short of it for weeknight dinners. Dinner in 30 minutes is great, but how about a shrimp dinner in 6 or a salmon dinner in 20? With the Bumble Bee SuperFresh™ entrées, all you have to decide is what to pair the seafood with. I plan on being stocked up on this product.

I want to highlight a couple of the different seafood products I tried, and share a recipe I made to serve along with each…

Bumble Bee SuperFresh™ Tilapia with Lemon, Pepper, & Herbs

Here are a few of my thoughts on this product…

  • Like all their fish products, the package comes with everything you need already included, even the parchment paper.
  • The fish cooks straight from the freezer so you don’t have to remember to thaw it.
  • It cooks pretty quickly – just 17 minutes at 400F.
  • The ingredients are all-natural and gluten-free: premium tilapia fillets, extra virgin olive oil, fresh lemon peel, sea salt, black pepper, shallots, lemon, and parsley.
  • The fish is flaky and tasted fresh and perfectly seasoned with a nice bright lemon-pepper flavor.

I paired this fish with a simple pasta dish to make it a full meal. Peas and carrot make this a spring-y side dish, but feel free to use your favorite veggies or whatever you have on hand; the garlic and the fresh lemon are what really tie the flavors of this pasta together with the fish. And of course it comes together quickly; I only had 17 minutes to work with as the fish cooked!

Spring-y Peas + Carrot Orzo

Serves 2

Preparation Time: 3 minutes

Cooking Time: 15 minutes

1/2 cup (115 g) orzo pasta

1/2 tablespoon butter

1/2 tablespoon olive oil

1 large carrot, halved lengthwise and thinly sliced

1 cup frozen peas, thawed

1 large clove garlic, crushed using a mortar and pestle or grated on a microplane

2 teaspoons fresh lemon juice

1/4 teaspoon salt

1/8 teaspoon ground black pepper

  1. Cook the pasta to al dente according to the package directions.
  2. Heat the butter and olive oil in a medium skillet over medium heat; once the butter is melted, add the carrot and cook until it’s starting to soften and brown in spots, about 4 minutes, stirring occasionally.
  3. Add the peas and garlic and cook 1 minute more, stirring constantly.
  4. Combine the pasta, peas/carrot mixture, lemon juice, salt, and black pepper in a medium bowl.
  5. Serve hot or cold, along with Bumble Bee SuperFresh™ Tilapia with Lemon, Pepper, & Herbs.

Bumble Bee SuperFresh Lemon Shrimp with Garlic & Herbs

Here are a few things that stood out to me about this product…

  • The shrimp are beautifully cleaned, which is a huge time-saver.
  • Like the fish products, the shrimp cooks straight from the freezer so you don’t have to remember to thaw it.
  • The shrimp literally cooks in 6 minutes!
  • The ingredients are all-natural and gluten-free: premium shrimp, butter, fresh lemon juice, garlic, extra virgin olive oil, white wine, fresh lemon peel, parsley, red pepper, sea salt, and black pepper.
  • What stuck out to me about the flavor was how fresh it tasted, and how well it was seasoned…there was no need for even salt and pepper shakers on the table.

Mesclun Salad with Creamy Garlic-Lemon Dressing

Serves 2

Preparation Time: 5 minutes

Dressing:

1/4 cup plain, low-fat yogurt

2 teaspoons fresh lemon juice

2 teaspoons extra-virgin olive oil

1 small clove garlic, crushed using a mortar and pestle or on a microplane

Scant 1/2 teaspoon lemon zest

1/4 teaspoon dried dill (or 3/4 teaspoon minced fresh dill)

Pinch each salt and black pepper

Salad:

4 cups (115 g) mixed Mesclun greens

1/2 small onion, thinly sliced

1/2 cup cherry or grape tomatoes, halved

1/4 cup crumbled feta

8 kalamata olives

  1. Whisk together all ingredients for the salad dressing.
  2. Toss together all ingredients for the salad and drizzle the dressing on top.
  3. Serve immediately, along with Bumble Bee SuperFresh™ Lemon Shrimp with Garlic & Herbs.
