On a cold, rainy night, nothing says comfort like a warm blanket and a good movie; of course, along with a good movie comes something to munch on. Instead of reaching for a bowl of popcorn, I made Crispy Parmesan Broccoli…tastier than popcorn and equally addictive.
Crispy Parmesan Broccoli
(Yield: 2 servings)
1/2 lb broccoli, rinsed, dried, and cut into bite-size pieces
1 large egg, beaten
1/4 c dried bread crumbs
1 tsp dried Italian herb seasoning*
1/4 tsp steak seasoning**
1/2 oz Parmesan cheese, finely grated (about 1/4 c)
Preheat oven to 425F. In a small bowl combine the bread crumbs, Italian seasoning, and steak seasoning. Put the broccoli in a large bowl, add the beaten egg, and toss with your hands to coat. Sprinkle in the bread crumb mixture and toss to combine. Transfer to a baking sheet and roast for 12 minutes, stirring once halfway through cooking.
*The Italian herb seasoning I use contains parsley, basil, oregano, rosemary, and thyme.
**The steak seasoning I use contains sea salt, coarse-ground black pepper, coriander seed, mustard seed, dill seed, and red pepper.

I have to say, while I don’t usually buy canned soup, I do make the occasional exception for Progresso’s tasty soups. They’re great for a quick meal (especially on a chilly day!) and I love the fact that there are reduced sodium varieties.
