Peanut Butter & Oat Carrot Cake Breakfast Pudding with Candied Oats 

Hello, Dear Readers!  I have some exciting news for you today, and if you love peanut butter and oats as much as I do, I think you’ll be thrilled!  

Along with a few other bloggers, I was recently asked to participate in a peanut butter and oat recipe contest; we each had to develop a breakfast recipe incorporating those two ingredients.  I came up with a recipe for Peanut Butter & Oat Carrot Cake Breakfast Pudding with Candied Oats using Peanut Butter & Co. Mighty Maple peanut butter and Bob’s Red Mill Extra Thick Rolled Oats.  It’s a delicious, healthy breakfast (the candied oats are really something special!) that comes together in less than a half hour.
