I think everyone has a dish that they enjoy but don’t make very often (or even just an ingredient that rarely finds its way into their grocery cart), for no reason other than it doesn’t come to mind. For me, this dish is enchiladas. And my ingredient is green salsa.
To my delight, this Chicken Enchiladas recipe from Cooking Light uses both.
I made just a few small changes to the recipe:
- I used 2 cups shredded leftover roast chicken instead of cooking chicken breasts and shredding them (so I was able to omit the first step of the recipe).
- Since I didn’t have liquid from cooking the chicken breasts, I used 1 3/4 cups low-sodium chicken stock to cook down with the green salsa.
- I used 6 individual gratin dishes to cook the enchiladas instead of cooking them in 1 large casserole dish.
- I increased the amount of sharp cheddar cheese to sprinkle on top to 4 oz (about 3/4 cup shredded).
The enchiladas were delicious! Give them a try if you’re looking for something a little different.

90% of the time, I order enchiladas when at a Mexican restaurant. I love to drizzle mine with salsa verde so a version highlighting the sauce would hit the spot with me.

I haven’t mastered any photography skills, and I know I wouldn’t be able to make a backlit photo look as good as these! They turned out great-I’d say your experiment is a success! Also, enchiladas are probably my #1 favorite food but I pretty much make them once a year or LESS! What is up with that? As for salsa verde, I’ve never made it and I think I need to try it. Your enchiladas look great!

First of all let me begin by saying that these enchiladas do not make good to my diet, not at all! I am monitoring my weight since I have lost my 5 excessive kilos and even though I am not on a strict diet still i ahve to watch what I eat. These enchiladas made me crave for Mexican and wish I had couple of them. I would be more than happy to just cheat and eat them!
I rarely think to make enchiladas either which is so weird because I LOVE them! I mean, really…melted cheese, a hint of spice…what more could a gal ask for?

I love enchiladas but avoid them because they’re so fattening. However I always reduce calories in dishes I cook by adapting them to how we eat. I don’t know why I’ve never done this for enchiladas. Thanks for sharing this. It looks delicious.
