Double Dark Chocolate Muffins with Almonds and White Chocolate Drizzle

A while ago, a friend and I were at Starbucks and she ordered a chocolate muffin. Now, I admit that I’ve sampled a lot of baked goods that Starbucks has to offer, but their chocolate muffins – never! I was intrigued and it looked good, but I resisted ordering it.

But it got me thinking that I need to come up with a good recipe for homemade chocolate muffins… (more…)

Savory Pineapple Salad

Most of us go through phases…

For example, I’ll go through the same routine for months, and then suddenly wake up one day and decide I want to completely switch up my workout program, rearrange the bedroom furniture, and – you know what else? – have broiled fish with roasted vegetables for breakfast. (Yeah, weird.) (more…)

Sweet and Sour Chicken

One of my favorite lines in Friends is when Chandler is moving in with Monica and he and Joey are enjoying their last night together. Not knowing what the other was doing, Joey ordered pizza and Chandler ordered Chinese; Joey (who is of Italian descent) told Chandler (who is really obviously not of Chinese descent) something like, “It’s kind of nice…me bringing the food of my ancestors and you bringing the food of yours.” What made it so hilarious was Chandler’s reaction. (Gosh, I miss that show!) (more…)

Quick Lasagna Casserole with Bowtie Pasta {aka Lazy Lasagna}

Not too long ago, I made a huge batch of bison, bean, and vegetable soup. It was, if I do say so myself, pretty fabulous.

Grain-Free Thai Eggplant Tempura with Spicy Garlic-Soy Dipping Sauce

I think I’ve probably mentioned before that although I try with all my might not to be an impulse shopper, I’m a huge sucker for cutsie foods. (more…)

10-Minute Homemade Red Enchilada Sauce

I’m nothing approaching a homesteader (heck, I’m really not even a camper!), but I like a DIY cooking project as much as the next girl. This is why it seriously surprised me that it never even dawned on me to make homemade enchilada sauce until recently.

Not long ago, enchiladas were requested for dinner and as my pantry was bereft of canned sauce, I knew I either had to head to the grocery store for just a single item (which I was not about to do…this is one of my pet peeves!) or get creative. (more…)

Banana-Sour Cream Coffee Cake with Brown Sugar-Pecan Swirl

I’m not really a shopper, at least not in the sense that most ladies are.

I steer clear of the mall unless absolutely necessary (darn Apple Store with its only location in the mall…and double darn Cheesecake Factory with its fabulous cheesecake!). Anyway. (more…)

Ras el Hanout

What I love most about my Middle Eastern kitchen here in Kuwait is how it smells.

Yes, it’s clean, so there’s the background smell of cleaner (which I actually love), lol. But it’s the other smells that captivate me…

The heady aroma of spices mingling with the soft scent of sweet fresh fruit and the bright smell of freshly ground Turkish coffee. Every time I pass the shelf where I keep my canister of Turkish coffee I can’t help but stop for a moment and inhale deeply. (more…)
