A couple years ago, Mike and I were at a pretty spiffy hotel in New York City; one morning Mike had to leave early for a meeting.

I was debating between a workout, bubble bath, and breakfast. Being in New York and being the bagel-lover that I am, breakfast won out. There were a couple of delis not even a block away, but left to my own devices, I ordered room service: an espresso and a lox bagel. I think it might be a little weird that I don’t watch TV. (Except for two shows, which I am both insanely excited about since they’re starting up again soon: Game of Thrones and The Borgias.) I’ll admit it’s somewhat of a shame that I don’t know about the latest shows on the Food Network, and that the Real Housewives of Wherever are completely lost on me (ok, so maybe that second one isn’t really a shame at all). Broccoli Divan {Vegan; Grain-Free; Gluten-Free}

DSC_9309(small)One of the monthly cooking groups I’m in, the 5 Star Makeover group, has had a bit of a makeover itself and is now the Creative Cooking Crew of 24 talented bloggers, hosted by Laz of Lazaro Cooks and Joan of Foodalogue. Group member Trix from Tasty Trix chose the theme for our first month: “Choose one of your favorite rich, heavy, fatty animal-protein-based meals and give it a healthy VEGAN spin.”  It’s a theme I was pretty happy with, as I’m no stranger to developing vegan recipes (Refried Lentils, Spinach & Bulgur Wheat Stuffed Red Peppers, and Pumpkin Chickpea Curry have been a few favorites in my house). Thinking it would be fun and easy, I was pleased with this theme.

But when it came time to actually choose something to make it was a bit harder than I expected. (more…)
