Today marks mine and Mike’s 8th wedding anniversary, which seems completely crazy to me. (Crazy that eight years have passed, not that we’ve stuck together that long. Although, maybe it is a little crazy since we were so young when we got married…who says kids can’t make good choices? Lol.) Anyway, people have been congratulating us all over the place for passing the “seven year itch”, so I’ll take our 8th anniversary as a really good omen.
I don’t like PDAs (which includes PDAs on the blog!) so not to worry, I won’t get all mushy here. But I will tell you a little something about our honeymoon… (more…)

A while ago I bought a bulk-sized package of creamed coconut on Amazon. I was actually looking for coconut cream but I couldn’t find it; not realizing that several coconut products (creamed coconut, coconut cream, and cream of coconut) were named in a lawyer-like fashion with their meaning hinging on an ever-so-slight difference in word ordering, I bought a six-pack.
How different could creamed coconut really be from coconut cream?, I asked myself. I was about to find out.
Let’s just say, perhaps the only thing they have in common is that they’re made from coconut. (more…)

These cookies are some kind of wonderful. The best kind of wonderful, actually, because when chocolate is involved and it nourishes and energizes you instead of making you feel lethargic, groggy, and weighted-down, it’s pretty amazing.
I’ve been working on perfecting my grain-free naturally-sweetened chocolate chip cookie recipe for quite a while now, and I’ve tried all different variations. Some with a mashed banana base, some with a nut butter base. While they were all delicious, I wanted something that is as close as I could get it to a classic chocolate chip cookie flavor. No bananas welcome, and sorry nut butter, I still love you, but this isn’t the place for you, either. (more…)

I thought I knew about the destruction and havoc that natural disasters could wreak.
I’m familiar with snowstorms that come bearing five-foot-high-walls of snow, and personally knowing people (dear family and friends) who have been snowed onto the highway for two or three days straight, with little or no food or water, no place to go to the bathroom, and no way to contact loved ones once their cell phones die.
And I lived in Florida for three years during law school, so I’m no stranger to hurricanes either.
But this was a real wake-up call.
Hurricane Sandy has affected so many people, in ways that are just unthinkable to most of us. (more…)

Have you tried chia seeds? I first had them sprinkled on a salad a couple years ago…they are delicious with a subtle nutty flavor, and they pair well with so many things. (They’re a great addition to smoothies, oatmeal, and muffins!) For the past year or so, I’ve been seeing chia seed pudding all over the place and I decided it was finally time to try it for myself. Sweet Velvety Radish Sauce
One of my very first food memories is of radishes.
Grandma, I questioned, Do you really like radishes?
My grandmother was standing over her kitchen sink washing a bunch of radishes. She was lost in thought, looking out the window above the sink at a bird who was merrily chirping nearby. A refreshing breeze fluttered the curtains and brought with it the scents of freshly mown grass, lilac, and earth. It was late spring and we were about to enjoy what was probably our first meal of the season outdoors, in the backyard at my grandparents’ house. I was about six.
She chuckled.
I continued. To me, they taste a little like spicy dirt.
She laughed, nodding her head. To me too, but I don’t mind them.
Since then I’ve never asked my grandmother if she actually likes radishes or just sort of tolerates them. I know for myself, despite the numerous healthy things I make myself ingest solely for the sake of health, radishes are still not something I like. Or eat.
Sigh.
But I do like to challenge myself.

Fresh, seasonal produce is one of life’s biggest pleasures. I can’t think of anything I’d rather eat all day long on a crisp fall day than ripe concord grapes straight off the vine. (In fact, this is exactly what I do once a year on my grape-picking pilgrimage.) Last year I made concord grape jam with my loot and now I get to savor the grapes and the memory of picking them all year long. So, until strawberry season (which isn’t until mid-June where I live), I will enjoy my grape jam bars. :) (more…)
