Crispy Parmesan Broccoli & A Giveaway

On a cold, rainy night, nothing says comfort like a warm blanket and a good movie; of course, along with a good movie comes something to munch on.  Instead of reaching for a bowl of popcorn, I made Crispy Parmesan Broccoli…tastier than popcorn and equally addictive.

Crispy Parmesan Broccoli

(Yield:  2 servings)

1/2 lb broccoli, rinsed, dried, and cut into bite-size pieces

1 large egg, beaten

1/4 c dried bread crumbs

1 tsp dried Italian herb seasoning*

1/4 tsp steak seasoning**

1/2 oz Parmesan cheese, finely grated (about 1/4 c)

Preheat oven to 425F.  In a small bowl combine the bread crumbs, Italian seasoning, and steak seasoning.  Put the broccoli in a large bowl, add the beaten egg, and toss with your hands to coat.  Sprinkle in the bread crumb mixture and toss to combine.  Transfer to a baking sheet and roast for 12 minutes, stirring once halfway through cooking.

*The Italian herb seasoning I use contains parsley, basil, oregano, rosemary, and thyme.

**The steak seasoning I use contains sea salt, coarse-ground black pepper, coriander seed, mustard seed, dill seed, and red pepper.

Now on to the giveaway!  I was recently given a Progresso Healthier You Prize Pack from Progresso through My Blog Spark.  The Prize Pack included two cans of Progresso Reduced Sodium soup (chicken gumbo and tomato parmesan), a Progresso soup mug, and a fitness ball.  The very kind people at Progresso and My Blog Spark are also providing another Prize Pack to one lucky winner!

The Winner of This Giveaway Will Receive a Progresso Healthier You Prize Pack, Which Includes Everything You See Here:  Two Cans of Progresso Reduced Sodium Soup, a Progresso Soup Mug, and a Fitness Ball (Image Provided by My Blog Spark)

I have to say, while I don’t usually buy canned soup, I do make the occasional exception for Progresso’s tasty soups.  They’re great for a quick meal (especially on a chilly day!) and I love the fact that there are reduced sodium varieties.

Mmm, Lunch!

Never seen broccoli in this version. And never thought it makes a great snack while watching a movie, perfect idea! Bet it’s tastier than popcorn.

Hmmm, crunchy broccoli instead of popcorn – I’ll have to try it. Oh, and I love tomato soup. Usually don’t eat canned soup because of the high sodium content but I haven’t tried Progresso’s lower sodium selections and I could sure use an exercise ball after my recent trip :)

Oooh, I have two stalks of broccoli in my fridge right now. I was going to just stir-fry them. But now, you’ve given me inspiration to make them crispy-crunchy in the oven instead.

Faith…This is a great way to introduce a vegetable that most people have second thoughts about. I really don’t mind eating brocolli and this way of making it will entice me to eat more of it ;o)

    Flavourful wishes,

Faith, you have done the impossible. You have made broccoli seem like a good thing to eat on its own! No longer relegated to side dishes, this actually looks like something I could just snack on. Beautiful!
