Easy Apple Jalapeno Relish

Sweet and tangy with a hint of heat, this Easy Apple Jalapeno Relish is a great condiment to add to any number of things, but it’s equally delicious on its own as a cracker topping.
Ingredients
  • 2 medium-sized crisp, sweet apples (such as Fuji or Honey Crisp), washed, cored, and diced small (not peeled)
  • ½ small-medium yellow onion, peeled and diced small
  • 1 jalapeno, de-seeded and minced (more or less to taste)
  • 3 tablespoons sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon water
  • ⅛ teaspoon sea salt
  • Breton Artisanal Cranberry and Ancient Grains crackers, for serving
  • White cheddar slices, for serving (optional)
Instructions
  1. Add all ingredients to a medium saucepan over medium heat; stir until the sugar is dissolved, and then cover the saucepan and cook 8 minutes, stirring occasionally.
  2. Uncover the saucepan and cook 2 minutes more, stirring frequently.
  3. Remove from heat, cover the saucepan, and let the relish sit for 10 minutes.
  4. Use the relish, or let it cool to room temperature and then store in the fridge up to 5 days.
  5. Serve on crackers, or as a condiment for sandwiches, hot dogs, or part of a charcuterie or cheese board.
