Meals in Minutes — Guacamole BLT

Most people know that avocados are really fruits rather than vegetables, but until recently I had no idea that avocados are actually large berries that come from the same family as cinnamon, camphor, and bay laurel (for more info on avocados, see here).  Avocados are known for their creamy texture and buttery flavor, and are used in a variety of sweet and savory recipes. 

img_4821-smallMy next Meals in Minutes post is a sandwich – Guacamole BLT.  The salty, crispy bacon and the smooth, creamy avocado pair perfectly, and the tomato and lemon juice really help to brighten the avocado’s flavor.  Since it’s mashed, guacamole is the perfect way to use up leftover avocado.


Guacamole BLT


(Yield:  1 sandwich)


2 slices multigrain bread (or any bread you like)

2-3 slices turkey bacon, cooked

2 large leaves lettuce, washed and dried

1/4 avocado

1/4 c cherry tomatoes, quartered

1 scallion, thinly sliced

1 tsp lemon juice

Dash salt and pepper


Toast the bread.  Mash the avocado and stir in the lemon juice, salt, and pepper; then mix in the tomato and scallion.  Spread the avocado mixture on one slice of bread, then top with the lettuce, turkey bacon, and the remaining slice of bread.

    Ben would adore this. The man eats avacados like I eat peanut butter. What’s so weird–I only like avacados in guacamole–I can’t eat them on sandwiches or Monterrey chicken, a mexican dish here. It makes me want to hurl, but I can eat bowlfuls of guacamole. I’m so odd.

    I just ate this last Friday!! Haha, they were selling it in my school’s cafe. But they added one more thing: turkey! So it was TGB: turkey, guacamole, bacon, and tomatoes and lettuce too, of course.

    Yum… avocados are the best! I have to remember to buy some at the market tomorrow! I love using avocado instead of cheese in my turkey sandwich.

    What a great sandwich! I love avocados and bacon. The avocado is so creamy that you can easily skip the mayo usually found on BLTs. I want to take a bite :)

    There is nothing like a good old fashioned BLT sandwich. i cannot remember the last time I really enjoyed one. Yours looks really, really good. I like the addition of avocado. I love avocados and could eat them endlessly. Nice post!

    I had no idea that avocadoes were related to cinnamon! It’s no wonder I love the two so much. Not together, per say…

    Guacamole is really the perfect way to liven up a classic BLT. What a comforting sandwich.

I love that it is a healthy, balanced “Meal in Minutes!” Never knew that Avocado was related to cinnamon. I love Turkey bacon and everything about this!

    There’s nothing about this sandwich I don’t like. I can’t believe I’m the only one in my family that likes guacamole. What is wrong with those nutty people?!!

    Your sandwich looks so appetizing! I’ve never used avocado in a sandwich. Actually, I rarely use it in my kitchen as it’s not common in our cuisine. But I must use it more often.
    By the way, I love the new look of your blog.The banner looks great!

    Faith I’m all over this! I love avocados and only eat BL and no T’s. Now I can top my BL’s with the avocado making for a yummier sandwich! :)

    We had this for lunch today–thanks for sharing this fabulous idea! My husband surprised me b/c he claims not to like guacamole but he really loved this sandwich. He had two. :)
