Shrimp Burgers with Scallion Mayo is a fun way  to switch up a classic burger!

Everyone loves a good beef burger, but sometimes it’s fun to switch things up and make them out of something else. If you’ve never had a shrimp burger, you are in for a real treat!

This recipe makes either two jumbo burgers, three regular burgers, or four small-ish burgers. If you can believe it, that jumbo burger pictured above is only 1/4 pound of shrimp! It looks like it’s at least 1/2 pound, right?  It’s bulked up with veggies (for flavor and to help keep it juicy) and breadcrumbs (to help it stay together in burger-form). I have to be honest though, as enticing as that jumbo burger is, I could only finish about half of it in one sitting…next time I’ll make this recipe into three or four smaller burgers. So if you like shrimp, this recipe is a great way to stretch your dollar to the fullest.

These burgers pair really well with Carrot-Raisin Salad, and together they are perfect for an easy meal.

Prep time:  10 mins
Cook time:  12 mins
Total time:  22 mins
Yield: 2 jumbo burgers, 3 regular burgers, or 4 small-ish burgers
 
Ingredients
Scallion Mayo:
  • 4 tablespoons low-fat mayo
  • 1 teaspoon hot sauce (more or less to taste)
  • ½ teaspoon honey
  • ½ teaspoon lemon zest
  • ⅛ teaspoon black pepper
  • 1 scallion, green and white parts, thinly sliced
Shrimp Burgers:
  • 1½ tablespoons olive oil
  • 1 large stalk celery, diced
  • 1 small onion, diced
  • 1 large clove garlic, minced
  • ½-inch piece fresh ginger, grated on a microplane
  • 8 oz (230 g) peeled, deveined raw shrimp
  • 1 teaspoon lemon juice
  • 1 teaspoon hot sauce (more or less to taste)
  • 1 teaspoon soy sauce
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Breadcrumbs (up to ½ cup)
Other:
  • Olive oil, for the pan
  • Buns or bread, for serving
  • Sliced cucumber or lettuce, for serving
Instructions
  1. Whisk together all ingredients for the Scallion mayo in a medium bowl; cover with plastic wrap and transfer to the fridge until serving.
  2. For the Shrimp Burgers, heat the oil in a medium skillet over medium heat. Add the celery and onion and cook until softened but not browned, about 5 to 7 minutes, stirring occasionally. Add the garlic and ginger and cook 1 minute more, stirring constantly. Cool slightly.
  3. Add the shrimp to a food processor and pulse a few times until it forms a paste. Pulse in the onion/celery mixture, lemon juice, hot sauce, soy sauce, salt, and black pepper. Once combined, transfer the shrimp mixture to a bowl and mix in the breadcrumbs a little at a time until the mixture stays together when shaped into a burger.
  4. Form the mixture into however many burgers you want. Coat the bottom of a medium skillet with canola oil and preheat over medium to medium-high heat; add the burgers and cook until golden outside and fully cooked inside, about 4 to 5 minutes on each side (depending on how big the burgers are), flipping once.
  5. Serve the burgers on a toasted bun or bread with sliced cucumber or lettuce and Scallion Mayo.
