    When this popped into my inbox I knew I had to make it. There are little eggplants starting to pop up in my garden…now is just the waiting game until I can make this ;)

    I do love eggplant, even if it’s doesn’t love me… I think I’m slightly intolerant, since I get a burning sensation in my throat and stomach when I eat it. But that doesn’t stop me, because it’s just too delicious! I’m going to check out that recipe right now. :)
