Sweet and salty pair perfectly in this refreshing Watermelon Salad with Sweet and Spicy Vinaigrette!

Watermelon Salad with Sweet and Spicy Vinaigrette 1

Growing up, our summertime meals consisted mostly of fresh veggies.

Sweet grilled corn on the cob; sliced red tomatoes with my mom’s sweet creamy white dressing; zucchini sautéed with garlic, olive oil, and salt; steamed green beans with butter; bowls of leafy greens. It was bliss, all of it, and it’s no wonder that to this day my sister and I both prefer veggies over meat or junk food. (Thank you, Mom!)

20-Minute Thai-Inspired Summer Vegetable Curry with Seared Salmon

20-Minute Summer Vegetable Curry with Seared Salmon 1

This 20-Minute Thai-Inspired Summer Vegetable Curry with Seared Salmon makes the perfect weeknight summer meal. It’s amazing how much technique effects the final outcome when you’re cooking. The mere thought of green beans made me gag as a kid until I had them for dinner at a friend’s house and realized they aren’t inherently mush. (Sorry, Mom…you were notorious for overcooking the beans!) I disliked fried eggs until I learned how to cook them so that the whites are set and the yolks are runny. (The only thing worse than chalky overcooked egg yolk is icky undercooked egg white goop…ugh.) And I thought I hated fish […]...

Grilled Chicken Salad with Corn, Peaches, Blue Cheese, and Balsamic-Honey Syrup

Grilled Chicken Salad with Corn, Peaches, Blue Cheese, and Balsamic-Honey Syrup 1

This Grilled Chicken Salad with Corn, Peaches, Blue Cheese, and Balsamic-Honey Syrup is full of summer flavors! Until about a year ago I was completely grill-lazy. Which was strange because I went through a grill-all-the-time phase where I wouldn’t even let my hubby touch the grill. (Ok, that’s a stretch…I insisted on being the primary griller, but far be it from me to completely stand between a man and his fire.)...

Peanut Butter and Jelly Loaf

Peanut Butter and Jelly Loaf 1

This Peanut Butter and Jelly Loaf has all the flavors of that nostalgic sandwich baked right in. With kiddos home from school for the summer, if your house is anything like mine was growing up, I bet your kitchen is seeing its fair share of PB&Js. Nothing is faster for parents to whip together…and nothing is easier for kids to grab and eat on the go while they head out the door for more play. (Because when you’re 9 and it’s summer, food is of secondary importance after spending time outside with your friends.)...

Tangy Arugala Salad with Sumac (Salatat Jarjeer)

Tangy Arugala Salad with Sumac (Salatat Jarjeer) 1

Rocket lettuce is the star of this Tangy Arugala Salad with Sumac (Salatet Jarjeer) that I learned how to make in Kuwait! I’m not a long-time fan of peppery “rocket” lettuce. In fact, it’s only within the past couple years that I started to enjoy arugala. In Kuwait arugala is widespread, which isn’t surprising because arugala thrives in sandy soil. When Mike and I lived there, he had a habit of ordering from his favorite Persian restaurant (which was literally a two-minute walk from where we lived) about once a week. They always included a few bags full of arugula with our kebabs, and since […]...

Creamy Dijon Potato Salad with Herbes de Provence

Creamy Dijon Potato Salad with Herbes de Provence 1

If you’re looking for a new twist on a classic favorite side dish, Creamy Dijon Potato Salad with Herbes de Provence is the answer! If you follow me on Instagram, you know that when Mike and I were in Paris there was no holds barred on things like bread and cheese (come on, it’s Paris). We tried to make up for it by walking seven to ten miles a day (and that wasn’t even our sole means of transportation; we typically took the Metro three or four times a day too! What can I say? Paris is big and there’s a lot to do). And […]...

Patriotic Cheesecake Parfaits

Patriotic Cheesecake Parfaits 1

Fun and festive Patriotic Cheesecake Parfaits made with fresh strawberries, blueberry sauce, and goat cheese-based cheesecake are perfect for the 4th of July or any summer party. One of my favorite 4th of Julys was when I was about 20. I went to a carnival with a group of girls and we packed a cooler with food and drinks to take with us to watch the fireworks at a local town park. It seemed like the epitome of summer fun....

Strawberry and Cream Smoothie Bowl

Strawberry and Cream Smoothie Bowl 1

Every spring I look forward to picking strawberries the same way I look forward to picking apples in fall. It’s like a seasonal rite of passage. But then when the time actually comes to do the picking, typically my basket isn’t even halfway full when I end up thinking about how much easier it would be to just buy the fruit pre-picked. So it goes every year, lol....
