This is my new favorite mug…a gift from my very sweet mom! The other day I was at Walmart with Mike who absolutely hates to shop. Because of this I can only take him with me when I have a very short list…so this basically means I was running in (literally) for just a couple things and he was in the electronics department patiently waiting for me while I raced through the aisles at warp speed. I happened to be sprinting through the baking aisle (surprisingly, they have a really extensive selection of Bob’s Red Mill products at Walmart) when I spotted a new (to […]...
Oven-Coddled Eggs {With Chard, Parmesan, & Fresh Herbs}
The latest 5 Star Makeover theme was Farmers’ Markets, a theme I really enjoyed because of how wide open for creativity it was. I can’t think of any way I’d rather spend a weekend morning than perusing my farmers’ market, looking for fresh goodies and thinking of how I want to eat them....
Grilled Zucchini
On weekends during the summer my family does a lot of grilling. Anything and everything you can imagine is fair game, from jalapeno poppers to crab cakes, to more traditional things like kebabs, chicken wings, and corn on the cob. Next week we have some pretty tasty plans for grilled stuffed mushrooms and I’m dying to see how they turn out. But so far this summer, this zucchini has been my favorite thing to come off the grill....
Vegetable Cream Cheese Dip
You might remember me mentioning my love of everything bagels a while ago; what I didn’t tell you is that my favorite way to enjoy them is spread with veggie cream cheese. Such a perfect pair, those two; which is why when I recently made everything crackers (recipe coming soon!), the natural thing for me to make with them was this dip....
Italian Broccoli (Spicy Garlic Broccoli Recipe)
Italian Broccoli is garlicky with a touch of spicy heat and toasted flavor that comes from browning the broccoli in extra-virgin olive oil. It might become your favorite new way to make broccoli! Looking at my photos (especially the older one; scroll down to the bottom of this post to see it), you might think I overcooked the broccoli, lol! But hear me out, there’s a method to my madness, I promise....
Book Review & Recipe For Sardine Spread
Book Review: The Whole-Food Guide to Strong Bones: A Holistic Approach by Annemarie Colbin, Ph.D.: Recently I received a copy of this book to review. With its wonderful insight and knowledge regarding health and nutrition, this book had me hooked right from the beginning. The first paragraph of the Foreword is profoundly thought-provoking; it reads in part: Today we are faced with unprecedented challenges for the health of our bodies and of the planet. And the most powerful tool we have at our disposal to change our health, our environment, our politics, and our economics is our fork (emphasis added)…Putting six ounces of meat […]...
Baked Mushroom & Onion Dip
This time of year I’m always looking for new and exciting appetizers to make (of course, I’m always looking for new and exciting holiday cookie recipes this time of year too!). That’s because on Christmas Eve my family has a feast of hors d’oeuvres and appetizers. In addition to a few favorite staples that always grace the table, (such as a spinach-artichoke dip that’s almost fondue-like and sausage-stuffed mushrooms) every year there are also new additions to our spread. Recently, the nice people at Stonyfield Farms contacted me to let me know about a sweepstakes they’re hosting. Since one of the ways to enter […]...
Homemade Boursin
For those of you who aren’t sure what Boursin is, it’s a fancy soft French cheese that comes in several flavors (such as Pepper, Shallot & Chive, Garlic & Roasted Red Pepper, and my personal favorite, Garlic & Fine Herbs). You can read more about Boursin here. Boursin is amazing on veggie sandwiches (roasted veggies and Boursin on multigrain bread make a great light summer dinner!)…it’s great just on bread, crackers, and veggies…and, it makes the creamiest mashed cauliflower (or potatoes) you can imagine. I use it to make my husband’s favorite sandwiches (turkey, lettuce, and cheese spread). As delicious as Boursin is, […]...
