Pimento-Cheese Spread

March 25, 2010 by Faith 36 Comments

While I love living in Upstate New York, there are some things I really miss about the South.  Sweet tea is basically a culture in and of itself.  The pace of life is much more relaxed.  The weather (of course).  And Pimento-Cheese Spread.  I remember seeing Pimento-Cheese Spread for the first time at a local Publix and thinking that it looked interesting.  I bought some and when I got home spread it on a cracker (in law school that was basically called dinner).  I took one bite and knew I wanted a long-term relationship. The glorious phenomenon that is Pimento-Cheese Spread is sadly not sold […]...

If you want to participate in this month’s All Through the Year Cheer event, remember that your recipe can be for anything that says Christmas to you!  You can submit as many recipes as you want, and there will be a prize for the winner…     (Photo from Cooking Light)  The prize is a one year subscription to Cooking Light magazine!   Onto the sliders!  Who doesn’t love a good bagel?  Yeasty, slightly sweet, slightly salty…crisp and golden on the outside, chewy and dense – but not too dense – on the inside.  If you’ve ever had lox (which is cured salmon) with cream […]...

Book Review & Recipe For Sardine Spread

December 3, 2009 by Faith 16 Comments

Book Review:  The Whole-Food Guide to Strong Bones:  A Holistic Approach by Annemarie Colbin, Ph.D.:  Recently I received a copy of this book to review.  With its wonderful insight and knowledge regarding health and nutrition, this book had me hooked right from the beginning.  The first paragraph of the Foreword is profoundly thought-provoking; it reads in part:   Today we are faced with unprecedented challenges for the health of our bodies and of the planet.  And the most powerful tool we have at our disposal to change our health, our environment, our politics, and our economics is our fork (emphasis added)…Putting six ounces of meat […]...

Turkey Croquettes

November 25, 2009 by Faith 24 Comments

This recipe is a great way to use up leftover turkey, and although croquettes might sound complicated, these are really just shallow-fried patties made from cooked, shredded turkey and a few vegetables and seasonings. What a way to dress up leftovers!...

Book Review:  Eat Clean Cookbook by Tosca Reno:  Recently, I was lucky enough to receive a copy of Tosca Reno’s Eat Clean Cookbook to review.  The book is nicely organized by recipe type, and it even includes a chapter called “Baked Goods and Treats” (oh yes, you can eat clean and still enjoy delicious confections like tofu crème brûlée, carrot cake, chocolate walnut brownies, and rice pudding!).    This […]...

Baked Mushroom & Onion Dip

November 12, 2009 by Faith 22 Comments

This time of year I’m always looking for new and exciting appetizers to make (of course, I’m always looking for new and exciting holiday cookie recipes this time of year too!).  That’s because on Christmas Eve my family has a feast of hors d’oeuvres and appetizers.  In addition to a few favorite staples that always grace the table, (such as a spinach-artichoke dip that’s almost fondue-like and sausage-stuffed mushrooms) every year there are also new additions to our spread.    Recently, the nice people at Stonyfield Farms contacted me to let me know about a sweepstakes they’re hosting.  Since one of the ways to enter […]...

Giveaway, Book Review, & Mushroom & Thyme Flat Pies

September 23, 2009 by Faith 50 Comments

Along with the ushering in of fall come so many lovely things…cooler days and nights provide a welcome relief from the heat of summer, the trees turn gorgeous shades of crimson, orange, and gold, and make for gorgeous afternoon drives through the country side, comfort foods abound, and I start to feel like the holidays are right around the corner!  Another thing for me to look forward to about fall is that along with it comes my birthday.  If you’re wondering how old I am, I’m older than some and younger than others…I think a lady should never have to reveal her age.  ;) I […]...

Balsamic & Brown Sugar Fig Canapés

August 13, 2009 by Faith 24 Comments

These pretty little morsels are perfect for a picnic or party.  They’re portable and they taste amazing served straight out of the oven or at room temperature.  This recipe makes 24 two-bite sized canapés, but you can adjust this number based on how large or small you make them.  These were delicious as is, but next time I make them I think I’ll experiment and add a sprinkle of something on the top…maybe powdered sugar or basil chiffonade?  Any other garnish suggestions?…I would love to hear them!    I’m sending this recipe off to Kamran at The Sophisticated Gourmet for this week’s BSI…brown sugar!   […]...
