In my junior year of college, this dish was the go-to late-night study food for the whole floor of my dorm. Most of us on the floor were majoring in the same subject so we’d all have an exam at the same time. Since Mike and I eat fish a couple times a week (and because I’m usually not that adventurous with it…most of the time I make it the same way – poached!), I’m always looking for new ways to prepare it.  My inspiration for this meal was ordinary breaded and baked fish…but in the end this fish dish turned out to be anything but ordinary.  The onion, garlic, and herbs lend so much flavor, and the Panko breadcrumbs make a nice crunchy topping.  We both loved it, and it’s definitely a meal that will be repeated in our house....

When I think of stuffed shells I usually think of some kind of cheesy mixture stuffed inside pasta shells, topped with tomato sauce and melted cheese.  These shells couldn’t be farther from the norm.  As part of my Mother’s Day Menu, I wanted to make stuffed shells with crab…almost a deconstructed crab cake, stuffed in pasta shells.  Also, since crab in its natural form is found in shells, I thought it would be pretty cute to stuff a crab mixture into shells of a different kind.
