Sweet & Spicy Cucumber Salad

Have you ever seen the movie Don’t Tell Mom the Babysitter’s Dead with Christina Applegate?  It was one of my sister and my favorites as pre-teens, and although at the time it wasn’t even close to being applicable to us, our favorite quote from the movie was Sue Ellen, every girl over 25 should have a cucumber in the house!  Now that this quote does apply to me, I admit to nearly always having cucumber on hand.  And yes, I snagged a couple of slices for my eyes when I made this salad.  ;)...

Summer is the season of pasta salads. They feed a crowd and are quick and easy to throw together, which makes them perfect for potlucks, picnics, and barbeques. Plus they’re a great way to sneak more veggies into kids (or adults) who claim to not even like fresh corn (ahem, Mike). There is something oddly intriguing about the name Pancake Chicken Salad.  I was looking through the index of one of my cookbooks when I first read it, and I couldn’t help but wonder exactly what it entailed.  Is it crepe-like pancakes stuffed with creamy chicken salad?  Or maybe chicken salad fried into pancake shape?  The stranger the ideas that came into my head, the more the recipe piqued my interest…and the name alone just wasn’t enough, I had to read the full recipe....

Poached Salmon Pasta Salad

Mike has been on a real salmon kick lately, and I’m not going to complain since it’s better than him being on a lamb (ugh…lamb is not my favorite), chicken wing, or rice-with-every-meal kick (again).  Our favorite way to eat salmon is poached in salted water with onion, garlic, dill, bay, and peppercorn.  Cooked this way, we eat our salmon with a little drizzle of olive oil on top, usually with sides like asparagus and wild rice.  This meal is fantastic, being both delicious and healthy, but even so, variety is the spice of life and one night I wanted to switch it up a […]...

Stuffed Tomato Salad

Campari tomatoes are deep red, round tomatoes that are usually sold on the vine.  They’re sweet and juicy and I think they taste a lot like cherry tomatoes (they also look similar to cherry tomatoes, only larger).  Campari tomatoes are the perfect tomatoes for stuffing because in addition to their great flavor, they’re big enough to get a decent amount of filling inside. Valentine’s Day Menu: Strawberry Spritzers and Savory Strawberry Salad

Cobb Salad

Sweet and Spicy Slaw

Coleslaw is an essential component of summer barbeques, but who doesn’t get bored with the same old slaw?  This dish is perfect to serve at just about any BBQ…it can be made in ~10 minutes, its got sweet and spicy flavor components, and its vibrant colors are beautiful.  I served this slaw with grilled teriyaki salmon (see here for a homemade teriyaki recipe), and it was a perfect combination.    The day after making this slaw I sautéed up the leftovers with a handful of edamame (for ~3 minutes on the stovetop) and served it over brown rice for a quick stir fry.  (I love double-duty […]...
