Take your zucchini to new heights of delicious with this Cheesy Summer Squash Gratin.
Even if you don’t grow zucchini or have a neighbor who does, you’ve probably succumbed to the irresistibly cheap zucchini prices at the grocery store or farmers’ market. When fresh produce is in its delicious peak season and can be bought for a song to boot, there’s no way I can resist.
I recently made a Cheesy Summer Squash Gratin and brought it to a potluck and it was the talk of the night. It was the sauce…oh my gosh, that cheesy sauce will make you swoon. There isn’t much that cheese can’t improve, zucchini included. Make this for a party and you’ll have the adults asking for the recipe and the kids thinking they’re eating mac and cheese.
