Watermelon Salad with Sweet and Spicy Vinaigrette

The flavor of sweet watermelon is perfectly complimented by salty olives and creamy goat cheese in this refreshing salad.
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon extra-virgin olive oil
  • ½ tablespoon honey
  • ⅛ teaspoon each sea salt, ground black pepper, and crushed red pepper flakes
  • 4 cups cubed red watermelon (preferably seedless)
  • ¼ English cucumber, thinly sliced
  • ½ small sweet white onion, thinly sliced
  • ¼ cup fresh parsley, mint, or dill
  • ¼ cup whole Kalamata olives
  • 2 oz (60 g) crumbled goat cheese
  1. Whisk together all ingredients for the vinaigrette.
  2. Arrange all salad ingredients on a large platter and drizzle the vinaigrette on top.
  3. Serve.
