Green Beans with Garlic and Golden Raisins (Copycat from Disney’s Boma – Flavors of Africa)

Green Beans with Garlic and Golden Raisins was inspired by a dish I had at Disney’s Animal Kingdom Lodge called Boma – Flavors of Africa. It’s richly-flavored and slightly nutty with a good balance of sweet and savory.
Ingredients
  • 3 tablespoons extra-virgin olive oil
  • 1 lb (450 g) green beans, stems trimmed
  • 6 tablespoons golden raisins (sultanas)
  • 1½ cups (355 ml) chicken bone broth (I used Zoup!)
  • 2 large cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
Instructions
  1. Add all ingredients to a large skillet over medium-high heat.
  2. Bring to a boil, and then cover the skillet, turn the heat down to medium, and simmer until the green beans are fork-tender and the raisins are plumped, about 10 minutes.
  3. Turn the heat up to high and cook uncovered until the liquid is evaporated and the green beans start to brown in spots, about 2 to 3 minutes. Taste and add additional salt and pepper as desired.
  4. Serve.
