This easy, 1-bowl Drop Biscuits recipe yields tender, fluffy biscuits that are crispy outside and have a rich, buttery flavor. They’re ready in 25 minutes and pair well with just about any dinner!

The ingredient list is pretty short and the items are pretty basic. These whip up in less than 30 minutes using just 1 bowl.

And these biscuits are so good, you’ll find yourself making them all the time.

They’re fluffy and tender inside and crispy outside with rich buttery flavor. You can make them garlic bread flavored, plain, or put your own spin on them by playing with the cheese, herbs, spices, etc.

Ingredients

  • All-purpose flour – this is the base for the dough
  • Baking powder – our leavening agent
  • Garlic powder – this helps these biscuits taste like garlic bread
  • Salt – to season the biscuits
  • Dried parsley – for a garlic bread look
  • Unsalted butter – this is what makes these biscuits rich and flaky; makes sure the butter is cold
  • Whole milk – it will still work with low-fat milk, but use whole milk for best flavor
  • Shredded mozzarella – what’s garlic bread without mozzarella?!
  • Salted butter – this gets brushed on the top of the biscuits as soon as they’re out of the oven to take them over the top

Step-by-Step Instructions

  1. Whisk together the flour, baking powder, garlic powder, salt, and dried parsley in a large bowl.
  2. Add the butter and cut it in with a fork or a pastry cutter until it looks like coarse crumbs.
  3. There should be some pieces of butter the size of small peas.
  4. Add the milk a little at a time while stirring until it comes together.
  5. It should form a shaggy dough (you can add more milk if needed).
  6. Gently stir in the shredded mozzarella.
  7. Divide the dough into 8 equal pieces, and roll each into a ball. Arrange the dough balls on the prepared baking tray. Sprinkle a little garlic powder and dried parsley on top of each.
  8. Bake until the biscuits are golden and puffed, about 13 to 15 minutes. Immediately when they’re out of the oven, brush the melted butter on top of the biscuits.

How to Make Regular Drop Biscuits (Not Garlic Bread Flavored)

  1. Omit the garlic powder, dried parsley, and shredded mozzarella.
  2. Keep everything else the same.

How to Make Buttermilk Drop Biscuits

  1. Add 2 tablespoons sugar with the dry ingredients.
  2. Reduce the baking powder to 2 teaspoons and add 1/8 teaspoons baking soda.
  3. Omit the milk and use 1 cup buttermilk.

Variations on This Recipe

  • Cheddar Sage: Use shredded cheddar instead of mozzarella and fresh minced sage instead of dried parsley. Add 1/2 teaspoon onion powder. Omit the garlic powder.
  • Gruyere Thyme: Use shredded Gruyere instead of mozzarella and fresh minced thyme instead of dried parsley. Add 1/2 teaspoon onion powder. Omit the garlic powder.
  • Parmesan Rosemary: Use shredded Parmesan instead of mozzarella and fresh minced rosemary instead of dried parsley. Reduce the garlic powder to 1/2 teaspoon and reduce the salt to 1 teaspoon.
  • Sweet Drop Biscuits: Omit the garlic powder, dried parsley, and shredded mozzarella. Add 3 tablespoons sugar along with the dry ingredients. Add 1 teaspoon vanilla extract with the milk. Sprinkle the tops with sugar before baking.

Ingredients
 
 

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons garlic powder plus more for topping
  • 1 1/4 teaspoons salt
  • 1 teaspoon dried parsley plus more for topping
  • 1/2 cup unsalted butter chilled and diced
  • 3/4 cup whole milk plus more if needed
  • 1 cup shredded mozzarella
  • 2 tablespoons salted butter melted

Instructions
 

  • Preheat the oven to 450F. Line a large baking tray with a silpat baking mat or parchment paper.
  • Whisk together the flour, baking powder, garlic powder, salt, and dried parsley in a large bowl.

    There are only two of us in our house that aren’t on kibble rr formula, so recipes that make a heap of grub can sometimes be a problem. But we’ve had great luck making biscuits like this and freezing 3/4s of the dough. Cheers!
