We all know there’s a correlation: when temps start warming up, our salad consumption skyrockets. Whether you’re trying to lose those last few stubborn pounds before summer or are just craving lighter fare, salad seems to be the key.
I try to eat a salad as a full meal at least once each day (usually for lunch or dinner, but sometimes even breakfast), and it never gets boring because there are so many different ways to do it.
I like to think a little outside the box to keep things fun. You can single out ingredients for a deconstructed approach, layer everything together for a Buddha bowl-type meal, or remake your favorite salad at home your way (like I did with my Greek Salad Bowls with Spiced Lamb Burgers). Use whatever whole grains you like, or leave them out for a low-carb version. Play with your proteins; fish, red meat, chicken, tofu, and/or legumes are all great. Be sure to add lots of leafy greens, any other veggies you like, a flavorful dressing, and a little sprinkle of something on top (such as cheese or nuts) to keep it interesting.
