I usually try to be organized and plan out mine and Mike’s dinners for the week. Lunches, on the other hand, are a different story. A free-for-all, basically. I typically pack both of our lunches based on sandwiches or whatever leftovers I find in the fridge. During a normal weekday lunch I don’t usually get to enjoy a meal as delicious as the one I am about to share with you. If you have leftovers and want a fantastic meal ready in about five minutes, this is the meal for you. It’s ready in minutes, filling, and completely customizable.
Warm Veggie Wrap
(Yield: 1 wrap)
1 flatbread (I used a Kontos multigrain flatbread)
About 3/4 c chopped broccoli, steamed
1/4 c cherry tomatoes, halved
1 TB chopped onion (or scallion)
2 slices turkey bacon, cooked and crumbled
1 oz cheese (I used Colby-Monterey)
Dash pepper
Preheat the oven to 500F. Assemble the veggies on top of the flatbread, then top with the cheese, bacon, and a dash of pepper. Bake for 3-5 minutes until the cheese is melted and the bread is slightly crispy on the edges.
Our lunches are usually leftovers or salads. Over the holidays with a houseful I actually planned and made some lunches and it threw everyone off! We like it casual at lunch!
oh.. this meal is perfect for lunches when I don’t have time and mind to cook… and specially spring is so close, I really crave refreshing meals! :)
This looks great! It’s like a healthy hot pocket :)

I am drooling over this lunch! Wish I could have it!
This is an awesome looking lunch! Well balanced and very fresh! Those flatbreads look great!
That looks so healthy yet filling…
Great idea!
Delicious! I like packing in veggies at lunch so I can loosen up a bit with dinner and not torture my hubby too, too much! I’m so boring with lunches — always leftovers! Either from that week or pulled from the freezer! I’m the queen of Tupperware : )
I don’t often plan out lunches either! This lunch looks both tasty and healthy!
I’m lucky to work at home, but I still don’t plan lunches. I usually grab something with my daughter when she gets home from school. She would love this lunch.

I think i just left a comment about your yummy veggies wraps on another persons blog. Gota be more careful when multi-tasking. Either way i loved them so much that apparently just told someone else how much i love them =)
Oh what a lovely recipe! This would be perfect for my lunch tomorrow.

This reminds me that I have some flatbreads that need to be used in the pantry. And some broccoli. Coincidence? I think not!
What a fresh and delicious looking wrap. That flatbread looks terrific too! I’ll have to look for it!
That looks great! Except I’d add turkey. And ham. And cheese.
I can’t help it.
What a gorgeous wrap! I love all of the colorful veggies. A little cheese and turkey bacon – perfect!
A terrific lunch idea! Always love the flatbread and so yummy with turkey bacon and melted cheese!
Incredibly delicious looking! Now that’s a killer sandwich!
Bacon + veggies…what can go wrong with this? the flatbread looks fabulous, too! Kontos multigrain flatbread huh? I wonder if they sell that here….
That’s such a healthy. delicious wrap. I would love to try but I suppose I have to learn to make the multigrain flatbread first.
I’m all about the sandwiches and leftovers for lunch as well! Although by sandwiches I often mean gobs of peanut butter slathered on bread. But it works!
This looks like a lunch I could be proud of though! So many delicious ingredients on there.
This veggie wrap looks restaurant quality! I love the meals that use leftovers and include lots of veggies :)
I could eat this for every meal. Mindful portion sizes, balanced and full of flavor….with holding power from the cheese and turkey bacon.
I love quick meals, and veggies, and cheese, and turkey bacon! Oh my! I must make this soon.
I love veggie wraps and this looks so colorful!
Now, that I have grown up and learned to love veggies, this is my kind of food. It even looks good but that is your due. You make everything attractive.
