I have lots of fun stuff to share with you so I decided a Mosaic Mondays post was in order. Grab a coffee and dive in…
My Other Blog, Healthy Sweet Eats
Have you checked out my other blog Healthy Sweet Eats? If you like indulgent-tasting desserts that are simultaneously nourishing, I think you’ll enjoy it. All my recipes over there are gluten-free and use natural sweeteners like coconut sugar and honey. Most are paleo and/or primal-friendly. Some are low-carb and/or keto-friendly. Many are healthy enough for breakfast, but also make a mighty fine dessert.
Here’s my Low-Carb No-Bake Buttermint Cheesecake Mousse from over there:
Quick Low-Carb Breakfast Ideas: The Amazing 1-Minute Flaxseed Muffin
And if you’re into low-carb eating, you’ve probably heard of the One-Minute Flaxseed Muffin. (Or some variation of it.) I shared my version of that recipe on Instagram here, and I shared how to turn it into Low-Carb 5-Minute Flaxseed French Toast on Instagram here.
Iced Coffee Galore
It’s iced coffee season (love!) and here’s the easy cold-brew method I use for making the perfect glass. I’m also dying to try this gorgeous Cold-Brew Coffee Float from On a Sweet Sugar Rush and homemade Thai Iced Coffee (Steamy Kitchen has a delicious looking recipe here).
Thai Food Love
Speaking of Thai, if Thai food is your thing you won’t want to miss my easy Thai Beef Coconut Curry Soup recipe on Recipe Girl! P.S. It’s paleo-friendly.

Are you familiar with the blog O&O Eats? Breathtaking photography, yummy recipes, and travel as well.
(Healthy) Pumpkin Pie Soft Serve All Year Long
Back home in Buffalo, there’s this quaint little store called Country Peddlers. They sell things like seasonal produce, local honey, and meats. They also have an Ice Cream Shoppe where they have tons of flavors, including a few seasonal ones. My favorite to get in the fall is always the Pumpkin Pie soft serve…so delicious! I’m a little bummed about two things: 1) I no longer live there so I’m not able to get it, and 2) even if I did live there, it’s only available for a couple months out of the year. So I remade it (healthy-style, of course) using Earthbound Farm Frozen Organic Butternut Squash and it’s every bit as delicious. Here’s a tip to get it super thick and creamy like soft serve ice cream: reduce the liquid just a touch! Get my Cinnamon-Spiced Butternut Smoothie recipe on Earthbound Farm.
