May 20, 2016 by Faith 15 Comments

This Ethiopian Feast is comprised of Ground Beef Stew, Collard Greens, and Teff Flatbread (Minchet Abish, Ye’basha Gomen, and Ingera), and it’s the perfect meal when you want something a little different from the ordinary.

An Ethiopian Feast 1

One of the things I enjoy most about living in the DC area is the cultural diversity, which of course translates into easy access to a variety of different cuisines. Mike and I were already fans of international foods (Thai, Indian, and Middle Eastern are some of our favorites), but since moving here, our culinary world has been expanded even more.…

Orange Chiffon Layer Cake with Almond-Orange Italian Meringue Buttercream

March 21, 2016 by Faith 19 Comments

Orange Chiffon Layer Cake with Almond-Orange Italian Meringue Buttercream has a light and springy, yet moist and tender crumb, and the cake’s lightness is balanced perfectly by the buttercream’s richness. Growing up, my mom made orange chiffon cake in the shape of a lamb every single Easter. It was frosted with vanilla buttercream and coated in coconut, and she used black jelly beans for the eyes. If I remember correctly, a few years she even dyed coconut green so the little lamb could rest on a bed of grass, and also placed a few robin’s egg candies around for color. It was beautiful; an heirloom […]...

Tri-Color Quinoa, White Bean, and Bell Pepper Salad {And a $50 Bob’s Red Mill Gift Card Giveaway}

April 30, 2014 by Faith 117 Comments

When I don’t feel like cooking and I ask Mike to cook for us, we inevitably end up with one of two things for dinner: eggs or foul m’demmas (an Egyptian dish of mashed fava beans with garlic, tomato, parsley, cumin, lemon, and olive oil). Now, I love eggs in all their incarnations, and Egyptian food is always a favorite. But sometimes I wish the hubby would whip up something different, like, oh I don’t know, say a roast chicken with gravy or beef bourguignon. (Wishful thinking, right?)...

Garlicky Red Quinoa Patties with Mango Black Bean Salsa

March 24, 2014 by Faith 11 Comments

One of the perks of living in Florida is that when fruit trees bear fruit, people suddenly have more than they know what do with, and the wealth inevitably gets shared. I remember waking up to a huge box of mangos on my front porch one morning when I lived there during law school… One of my friend’s parents’ had a mango tree in their backyard (along with a grapefruit tree, those lucky ducks) and I was absolutely certain the fruit was from her family (who also frequently dropped off oranges and avocados that they got from a friend who also had fruit trees)....

Mujaddara Burghul (And a HUGE Giveaway of My Cookbook + Prize Packs From Bob’s Red Mill!)

October 31, 2012 by Faith 15 Comments

Photo (taken by yours truly) of Mujaddara Burghul from my cookbook, An Edible Mosaic: Middle Eastern Fare with Extraordinary Flair. If you’re curious about Middle Eastern food and looking for a good recipe to start with, Mujaddara Burghul, otherwise known as Lentil & Bulgur Wheat Pilaf with Caramelized Onion, is the perfect dish. It’s very healthy with lentils and whole-grain bulgur wheat as its main ingredients. (Since it’s a vegetarian meal, it’s easy on the wallet too!) It couldn’t be simpler to make…if making rice intimidates you, know that bulgur is much more forgiving than rice. And with caramelized onion and the perfect blend of spices, it’s […]...

Hazelnut Cookies {Vegan & Gluten-Free} & A Bob’s Red Mill Giveaway

November 13, 2011 by Faith 105 Comments

A friend recently asked me for a gluten-free recipe for cookies.  When asked what kind, he said, I don’t know…something nutty…or maybe chocolaty; definitely something that goes well with coffee!  I aim to please, and these cookies are all of the above....
