Stovetop Southwest Mac ‘n’ Cheese

As part of the Foodbuzz Tastemaker Program, I recently received some Pace Picate Sauce.  This sauce is much smoother than salsa (but with a similar flavor), which makes it better for using in recipes than dipping with chips.  It brings a bright, zesty flavor that I thought would be very nice in a southwest-style mac ‘n’ cheese.  This dish is easy to customize.  Use any color bell pepper you like.  If you don’t like beans, you can use another kind of protein, such as ground beef/turkey/chicken or grilled chicken breast.  If you want to spice up the heat level, add hot sauce, cayenne pepper, or cook […]...

Homemade Boursin

For those of you who aren’t sure what Boursin is, it’s a fancy soft French cheese that comes in several flavors (such as Pepper, Shallot & Chive, Garlic & Roasted Red Pepper, and my personal favorite, Garlic & Fine Herbs).  You can read more about Boursin here.    Boursin is amazing on veggie sandwiches (roasted veggies and Boursin on multigrain bread make a great light summer dinner!)…it’s great just on bread, crackers, and veggies…and, it makes the creamiest mashed cauliflower (or potatoes) you can imagine.  I use it to make my husband’s favorite sandwiches (turkey, lettuce, and cheese spread).   As delicious as Boursin is, […]...
