The first time I had these cookies was last Christmas when my husband ordered them from an online bakery after one of his friends suggested them. They might not look like anything spectacular, but I’m telling you, these cookies are addictive. They have a nutty, caramel flavor and when you add a drizzle of chocolate (or sandwich two of them together with chocolate), they will have you coming back for more…which may or may not be a good thing. Anyway, after having them for the first time, I was on a mission to find the perfect recipe and make them myself....
Twix Bar Cookies {aka Millionaire’s Shortbread}
Twix is my husband’s favorite candy bar, and I immediately knew I wanted to make him these bar cookies when I first saw the recipe for Millionaire’s Shortbread on Joy of Baking. Millionaire’s Shortbread is nothing other than shortbread topped with a layer of caramel and then a layer of chocolate – just like Twix! It’s a pretty simple and straightforward recipe to make; the only thing that’s even a little difficult/time consuming is the caramel filling....
Boston Cream Pie Oats
The only way to describe these oats is pure decadence. Typically I make what I call a working breakfast…I prepare my morning meal (oats, if I’m lucky), bring it to my desk (I’ll admit, I’m usually working from my desk at home, but still, it is work!), and work while eating it. No such thing as a working breakfast with these oats. I made them, brought them to my desk, and took a bite. These oats commanded my full attention. I had to put my work down, close my laptop, and savor every bite. With the holidays coming, I’m always looking for new recipes […]...

Black Forest Oats
Oats are one of my favorite things to have for breakfast or dessert. As a kid, my mom made only one variety of oats for my siblings and I: rolled oats with butter and brown sugar. Despite its lack of diversity, this was delicious, and was one of our favorite breakfasts. At that time, I had no idea that one of the best things about oats is their versatility. You can remake candies (such as almond joys and caramel apples), cakes (like strawberry shortcake), and all manner of desserts into something healthy without sacrificing flavor, or having to spend all day slaving over a hot […]...
A Sad Story & Some Double Crusted Chocolate Covered Sweet Surprise Cheesecake to Cheer You Up
I have a very sad story for you (you’re probably wondering how sad a story it can be if cheesecake is involved, and I suppose to that you’re right). Anyway, Delish is hosting a chocolate recipe contest that ends today, with a chance to win a $500 Williams-Sonoma gift card (and I do love Williams-Sonoma!). I just happened to have two blocks of Neufchatel cheese in my fridge and an idea for double crusted chocolate covered cheesecake. So I made this fabulous potentially-would-be-award-winning-recipe and I tried to submit it to the contest. I got an error message saying something like Your recipe can’t be […]...
Vegan Chocolate Cake with Vegan Buttercream Frosting (A.k.a. The Giant Birthday HoHo)
This is my mom’s recipe for chocolate cake…actually my mom said she got it from her mom who got it from her mom (I think every family has their own variation of this cake). It’s called “crazy chocolate cake” and for me and my siblings growing up, this was the cake at every birthday party, graduation, and other occasion that required the presence of a cake. This cake was vegan back in the day before veganism was common (or at least before it was as common as it is today). The original frosting wasn’t completely vegan since it had regular milk, but soy/rice/almond milk is […]...
Almond Joy Oats
Who needs dessert after dinner when you can eat it for breakfast? I’ve always loved oats, even as a kid, but when I think of them I usually think of, well, something oaty…something for horses…something nutritious and chewy/mushy and not too full of flavor but great with a little honey and milk or cinnamon and brown sugar. The days of boring oats are gone. Through much inspiration and experimentation I have learned that oats can be anything you want them to be. These oats (as the name implies) were inspired by the candy bar, Almond Joy. They’re subtly sweet from banana, creamy from being […]...
