Everyday Fare With Extraordinary Flair
If you’re a coffee drinker, I think you’ll swoon over one of these cakes with your coffee. (But yes, they are wonderful paired with a cup of tea as well!) These golden sunshine-colored beauties get their lovely rich yellow color from cornmeal and pistachio or olive oil. They have a soft crumb that’s subtly sweet, tender, and moist, and are faintly scented of sweet citrus and vanilla.
Last weekend I had big plans for the gigantic bag of organic lemons that had taken up residence on the bottom shelf of my fridge. Pushing thoughts of lemon bars, lemon curd, candied lemon peel, lemon sorbet, and lemon pie out of my head, I decided on lemon marmalade. Since the title of this post wasn’t “Lemon Marmalade” you can probably guess that something went wrong along the way....
