Low-Carb Broccoli Stem Gratin

May 18, 2018 by Faith Leave a Comment

Low-Carb Broccoli Stem Gratin is everything we love about a good gratin; it’s a rich, creamy, and cheesy side dish that you can pair with any number of things, from roast chicken to grilled steak. And bonus, this version uses broccoli stems so they don’t go to waste!

Low-Carb Broccoli Stem Gratin Overhead View

Most of us hear the word gratin and think potato. And most of us hear broccoli stem and think toss it. But neither of those are set in stone! Reducing food waste is always a goal of mine, so when I found myself with a pretty good amount of broccoli stems in the fridge, I wanted to think of a delicious way to cook them. And the other thing is, gratin can be just about any vegetable you want it to be! I love a good potato gratin, but this broccoli stem version is lower in carbs and arguably every bit as delicious.…

Cheddar and Thyme Butternut Squash Gratin Side View

Cheddar and Thyme Butternut Squash Gratin is a simple, but surprisingly flavorful side dish that pairs well with just about anything. Spinach, Ricotta, & Portobello Gratins

January 13, 2012 by Faith 22 Comments

I had a couple of beautiful portobellos in my fridge and I was going to make them into giant stuffed mushrooms…but, there are a million recipes out there for stuffed mushrooms and you probably don’t need another.  (Plus I was in the mood for something a little different!)  I thought the mushrooms would also make the perfect base for individual gratins so I decided to do that instead....

Zucchini-Tomato Gratin

January 31, 2011 by Faith 56 Comments

I think my body is longing for summer.  It’s not only the fact that I’ve been cold for about two months straight, but also that I’ve been craving summer fruits and veggies.  Zucchini isn’t in season right now and even though I usually like to eat my produce seasonally, I couldn’t help making this.  When I crave a particular veggie I think of it as my body’s way of telling me what it needs…and I’ve been dying for zucchini, so I went with it.  This dish was delicious, and in about seven months it will become indispensible when I’m looking for any and every way […]...

Autumn Potato-Pumpkin Gratin

November 19, 2009 by Faith 21 Comments

For quite a while now I’ve been trying to think about the perfect Thanksgiving dinner side dish.  Of course, turkey is the star of the show, but the deliciousness of turkey always delivers.  Unfortunately, however, all side dishes are not created equal.  There are the usual standbys, like stuffing, mashed potatoes, candied yams, and the ever-present holiday green bean casserole.  But year after year, I get a little tired of the same old side dishes.  Then I remembered a potato gratin that Rachael Ray had made on one of her special Thanksgiving shows…she called it Autumn Potato Gratin and it sounded perfect.    I changed […]...
