January 16, 2017 by Faith 5 Comments

These gluten-free No-Bake Oatmeal Cookie Energy Bites are the perfect treat to keep in the fridge to grab pre-workout or any time you need an energy boost!

In college I used to exercise early in the morning on an empty stomach and it didn’t phase me, not even during a long spin class! (Of course I was pretty ravenous post-workout though.) Now I find that I need to eat just a little something about 30 minutes before a workout not only for an energy boost, but also to keep from getting dizzy or light-headed mid-workout.…

Lemon Almond Cake Recipe (Paleo)

May 2, 2014 by Faith 6 Comments

This paleo Lemon Almond Cake Recipe has a dense, but moist and tender crumb, and is sweetly aromatic with vanilla and lemon. When I was younger, I hated any and all lemon-flavored desserts with a passion. Lemon bars, lemon meltaway cookies, and even lemon meringue pie were all on my “avoid at all costs list”. (But oddly enough, I was a big fan of super sour lemon-flavored WarHeads candy – does anyone else remember those? Incidentally, I consider this proof positive that there is no rhyme or reason to kids’ tastes.)...

Butternut Butterscotch Pudding

March 21, 2014 by Faith 6 Comments

Thank you to General Mills for sponsoring this post. I like to make sure that my family gets as many veggies in as possible, even in unexpected places; along those lines, we enjoyed this Butternut Butterscotch Pudding and I hope your family does too. There is no food that reminds me of school lunches as a kid more than pudding does. (Except maybe tunafish sandwiches, which were ubiquitous in my lunchbox, despite my pleading with my mom for something else. It was a rare happy occasion when a fluffernutter found its way in there, but when it did, what a bartering tool it was! It […]...

September 11, 2013 by Faith 14 Comments

After eating these granola bars, not only will you never want to buy store-bought granola bars ever again, but you will also never want to make another recipe for chewy granola bars again. I know that’s a mighty tall claim, but I’m standing by it. These bars are that good....

Dark Chocolate Coconut Pudding {Paleo; Vegan}

May 15, 2013 by Faith 39 Comments

Today marks mine and Mike’s 8th wedding anniversary, which seems completely crazy to me. (Crazy that eight years have passed, not that we’ve stuck together that long. Although, maybe it is a little crazy since we were so young when we got married…who says kids can’t make good choices? Lol.) Anyway, people have been congratulating us all over the place for passing the “seven year itch”, so I’ll take our 8th anniversary as a really good omen. I don’t like PDAs (which includes PDAs on the blog!) so not to worry, I won’t get all mushy here. But I will tell you a little something […]...

Healthy Chocolate-Walnut Fudge

March 25, 2013 by Faith 21 Comments

A while ago I bought a bulk-sized package of creamed coconut on Amazon. I was actually looking for coconut cream but I couldn’t find it; not realizing that several coconut products (creamed coconut, coconut cream, and cream of coconut) were named in a lawyer-like fashion with their meaning hinging on an ever-so-slight difference in word ordering, I bought a six-pack. How different could creamed coconut really be from coconut cream?, I asked myself. I was about to find out. Let’s just say, perhaps the only thing they have in common is that they’re made from coconut....
