Seared Salmon with Tzatziki Sauce

May 31, 2013 by Faith 14 Comments

I don’t really consider myself a clean freak, but I guess if the shoe fits. Or if she walks like a duck and talks like a duck…or in this case, if she feels the need to clean daily whether the apartment needs it or not… Ok, I guess you can go ahead and call me a clean freak (my husband already does). Which is why I’m appalled to say we had an ant issue not too long ago. (Ok, that’s a little dramatic. But I was at the very least surprised.) And to make matters worse, one day I heard one of our elderly lady […]...

Blueberry, Buckwheat + Chia Seed Muffins {Gluten-Free; Naturally-Sweetened}

May 20, 2013 by Faith 31 Comments

I get a lot of emails from people telling me they want to start their day off with a healthy breakfast, but they don’t have time for the usual healthy go-to breakfast-y things like eggs or hot cereal. Or even smoothies. (As a side note, I am a firm believer that making a smoothie shouldn’t take longer than five minutes! That is less time than it takes to sit down and eat a bowl of cold cereal; not that cold cereal can’t be healthy, unless it’s the sugar-laden junk, but eating a bowl of cereal still takes longer than a smoothie, since a smoothie can […]...

Healthy Peanut Butter, Banana, and Honey Milkshake

February 18, 2013 by Faith 40 Comments

One of my favorite family traditions is every winter we snowbird down to Florida for a couple weeks of vacation. We are Disney fanatics, the whole lot of us (well, maybe aside from Mike, who claims that he goes for my sake…but when we’re there he seems to be enjoying the food and merriment for his own sake as well, lol), so the bulk of our time gets spent there. (Last year I posted about the afternoon tea we had at The Grand Floridian.) We have a few favorite places where we always eat in each Disney theme park; at Hollywood Studios one of our […]...

Homemade Lamb or Beef Stock

September 21, 2012 by Faith 20 Comments

I have to give it to you straight on this one. Making stock isn’t the prettiest job. There are bones and/or carcasses to deal with.  And skimming scum (ugh, that word is especially not pretty…but that’s really what it’s called!) off the top of a simmering pot of liquid that is best described as looking like murky pond water.  And the fun continues into the next day with skimming the fat off the top of the cold gelatinous stock. It’s not pleasant, not in the slightest....

Healthy Gingerbread Pancakes For One

December 5, 2011 by Faith 31 Comments

Healthy Gingerbread Pancakes for One are a fun and festive way to start the day! I know, I know…it’s the holidays, what am I doing remaking a couple of classically indulgent recipes (gingerbread and pancakes) into healthy fare? I think it’s all about the little choices we make on a daily basis…the way we eat most of the time determines how we get to indulge the rest of the time....

Rosemary Red Bean Soup {Meals in Minutes}

October 14, 2011 by Faith 27 Comments

Rosemary always feels like Christmas to me. (And yes, it is way too early to be mentioning Christmas…or is it? ;) ) Anyway, this soup reminds me of Christmas, not only because of the piney smell of the rosemary, but also because of how warm and cozy it is…really perfect for warming up on a damp, chilly day....
