Every December, it’s easy to get swept up in the allure of baking in general and cookie-making in particular. But there’s a whole host of holiday parties going on and we need regular food too, right?!…

Stovetop Cauliflower “Macaroni” and Cheese {Gluten-Free; Lactose-Free}

November 11, 2016 by Faith 2 Comments

Gluten and Lactose-Free Stovetop Cauliflower “Macaroni” and Cheese is just 30 minutes to cheesy perfection…you won’t even miss the pasta! Mmm, mac and cheese, is the mantra filling my head every fall when the weather turns chilly and I start craving comfort food. There’s something about carby pasta enrobed in creamy cheese sauce that speaks to my soul....

Broccoli and Red Pepper Egg Muffins {Gluten-Free; Lactose-Free}

June 17, 2016 by Faith 5 Comments

Broccoli and Red Pepper Egg Muffins are great for whipping up on the weekend for breakfast during the week; and bonus, they’re an easy way to get vegetables into your diet at breakfast! I’ve noticed Murphy’s Law at work, particularly in situations when time is of the essence. Like an hour and a half before Mike and I were supposed to leave for the airport for our flight to London (BTW, if you’re interested you can check out a few of our London pictures in this post), when we went to get our passports out only to realize that the key to the lockbox where […]...

Cheesy Kale-Artichoke Quesadillas {Lactose-Free; Gluten-Free Option}

May 13, 2016 by Faith 10 Comments

Cheesy Kale-Artichoke Quesadillas are a fun spin on spinach-artichoke dip that will have even your pickiest eaters eating kale. I’m pretty bad about sticking to weekly themed dinners, like Meatless Mondays, Taco Tuesdays, Fish Fridays, etc. Not because we don’t eat meatless meals, fish, or tacos, but because when we do, it’s on any random day....

Cheesy Scalloped Cabbage Casserole {Gluten-Free; Lactose-Free}

February 5, 2016 by Faith 10 Comments

Gluten and lactose-free Cheesy Scalloped Cabbage Casserole is an all-star comfort food side dish that pairs well with any number of things! When Mike and I were first married, I didn’t have a huge repertoire of recipes up my sleeve. I was still in law school at the time, and batch-cooking freezer-friendly meals (like spaghetti, beef stew, turkey chili, and chicken stir-fry) on weekends was my way of life. I was determined to cook homemade dinners for us though....

10-Minute Sundried Tomato and Rosemary Fondue {Lactose-Free; Gluten-Free}

December 11, 2015 by Faith 9 Comments

This 10-Minute Sundried Tomato and Rosemary Fondue will be the hit of your holiday party! With how busy we all are this time of year, I know it’s tempting to avoid cooking. After all, if you can eat out or have a party catered you avoid having to cleanup too, which is a total perk. But I have a 10-minute (and one-pot!) appetizer or party food that will make you a rock star at your next holiday gathering....

Cheesy Green Bean and Red Rice Casserole {Lactose-Free; Gluten-Free}

November 16, 2015 by Faith 7 Comments

This Cheesy Green Bean and Red Rice Casserole makes a beautiful addition to any holiday spread. With Thanksgiving being next week, do you have your holiday meal fully planned? Of course there are some dishes that have to be on the table (I’m looking at you, turkey, gravy, mashed potatoes, stuffing, and cranberry sauce!), but in my family, we like to switch up the other sides a little bit. Maybe one year we’ll make candied sweet potatoes, and the next year it’ll be marshmallow-topped squash. Sometimes corn casserole is involved, and that is always a winner....

Cheesy Refried Bean Burritos

July 17, 2015 by Faith 5 Comments

These Cheesy Refried Bean Burritos are a hit with kids and adults alike! And bonus, they come together fast and are freezer-friendly. When I dormed in college, my friends took it upon themselves to teach me how to cook their favorite meals. An Indian boy across the hall cooked me vegetable curry. My Italian friend would cook me her grandmother’s recipe for chicken with basil cream sauce. And my roommate’s specialty was refried bean and bell pepper burritos....

Strawberry and Cream Smoothie Bowl

June 26, 2015 by Faith 9 Comments

Every spring I look forward to picking strawberries the same way I look forward to picking apples in fall. It’s like a seasonal rite of passage. But then when the time actually comes to do the picking, typically my basket isn’t even halfway full when I end up thinking about how much easier it would be to just buy the fruit pre-picked. So it goes every year, lol....

Caramelized Pineapple Grilled Cheese with Honeyed Walnuts

April 27, 2015 by Faith 26 Comments

What’s up with the pineapples on houses everywhere?, either Mike asked me or I asked him when we first moved to Virginia. Because they literally are everywhere…we noticed them carved or engraved on mailboxes, porches, doorways, doorknobs, door knockers, and welcome mats, and that’s before you even get inside. Once inside a traditional Southern house, you may notice a pineapple design integrated right into the house (for example, carved into fireplace mantels), as well as throughout the décor (like in paintings and carpets)....
