Strawberry Lemonade Muffins {#BrunchWeek}

May 8, 2017 by Faith 19 Comments

This post is sponsored in conjunction with #BrunchWeek. I received product samples from sponsor companies to aid in the creation of the #BrunchWeek recipes. All opinions are mine alone.

Strawberry Lemonade Muffins are always a crowd-pleaser; whip them as an addition to brunch or to take snack time to the next level.

Strawberry Lemonade Muffins in a Blue Bowl on a Wooden Background

I’m a breakfast girl through and through, and could happily eat breakfast for breakfast, lunch, and dinner. It just makes sense that if I like breakfast I love brunch, because what is brunch but a really hyped up breakfast? I’m all in.…

Mexican-Spiced Triple Chocolate Muffins

May 27, 2016 by Faith 5 Comments

Mexican-Spiced Triple Chocolate Muffins feature deep chocolate flavor with a hint of cinnamon and cayenne; if you’re a fan of Mexican Hot Chocolate, these muffins are for you! Some people see a couple of near-rotten bananas on their countertop as a reason to bring out their favorite tried-and-true banana bread recipe (for me, that would be this thing of beauty). But as a food blogger, I see extra-ripe bananas as a reason to think outside the loaf....

Eggnog Muffins with Cranberry Filling

December 21, 2015 by Faith 5 Comments

This recipe for Eggnog Muffins with Cranberry Filling is a great way to satisfy a sweet tooth when you’re in the mood for something festive! Mike sometimes talks about taking a Christmas vacation to somewhere warm, but I have trouble getting behind that idea. I need cold, preferably snowy weather to feel festive. Growing up in Buffalo, our Christmases were usually white. Not that it was ever a sure thing (because some years we did end up with a mucky brown Christmas!). But it was definitely more likely to be white there than it is here in the DC area....

Mango Lassi Poppy Seed Muffins

June 19, 2015 by Faith 30 Comments

One day a while ago, Mike came home with a box of mangos. He was so excited because he found them up at a local Indian market for me because I had asked him for Indian (Alphonso) mangos. I asked him where the mangos were from and he proudly exclaimed “The Indian market!” I checked the produce stickers and had to laugh when I saw that they were from Mexico. He still gets the best husband in the world award for that though....

Oatmeal Golden Raisin Muffins with Cream Cheese Glaze {Vegan}

February 18, 2015 by Faith 27 Comments

I make a ridiculous amount of muffins. They’re the perfect thing when you want to use up a little bit of coconut milk or the last 1/4 cup of a few different kinds of nuts or dried fruit, or if you have an apple or banana that isn’t good for much else except baking....

Whole Wheat Sour Milk Apple Cinnamon Muffins

January 16, 2015 by Faith 17 Comments

When Mike and I lived in Buffalo, we had the best neighbor ever. (She really was the sweetest, most amazing lady; she’s the one I talked about when I mentioned our ant problem one summer.) Being a bit older, she was old-school in a lot of ways....

Savory Spiced Sour Cream Zucchini Muffins

July 18, 2014 by Faith 7 Comments

Is your zucchini crop starting to come in yet? Because zucchini is so wonderfully predictable, we all know that if you’re a gardener, soon enough you’ll have it coming out your ears. You’ll be dropping of bags to friends, family, and neighbors....

Double Dark Chocolate Muffins with Almonds and White Chocolate Drizzle

June 20, 2014 by Faith 7 Comments

A while ago, a friend and I were at Starbucks and she ordered a chocolate muffin. Now, I admit that I’ve sampled a lot of baked goods that Starbucks has to offer, but their chocolate muffins – never! I was intrigued and it looked good, but I resisted ordering it. But it got me thinking that I need to come up with a good recipe for homemade chocolate muffins…...

Gluten-Free Cranberry-Orange-Pecan Cornbread Muffins

December 23, 2013 by Faith 10 Comments

For me, this fall has been all about cranberries. And I’m completely shocked to say that even my seasonal favs like apple and pumpkin have taken the backseat to cranberry this fall. (How did that happen?!) I think I’m finally giving cranberry the spotlight it deserves. (And shame on me for not doing it sooner! But I did share some pretty fabulous Cranberry-Flax Cookies and some lovely Dark Chocolate-Coated Cranberry Cake Bites.)...

Instagram post 2188013014389581388_193133428 When you want alllll the cranberry bliss, but without the gluten or loads of sugar. 🙌🏻 Inspired by Starbucks cranberry bliss bars, my #paleo cranberry bliss cake is an oldie but a goodie on my other website #HealthySweetEats! Instagram post 2185880916279076048_193133428 I asked my dad what he wanted me to bring for Thanksgiving. I know my uncle is making the turkey 🦃🍽 (and probably no less than 10 side dishes lol), so I wasn't at all surprised when dad said everything is all set. I told him there's no way I'm coming empty handed (and the veggie soup I made for his freezer stash doesn't count bc it's not Thanksgiving-related!), and he told me to bring "one of those crazy keto desserts" I make. 🤣 (Apparently my crazy keto dessert reputation precedes me. 🤷🏼‍♀️😆👏🏻) I'm going to try to find time to whip up something low carb, or I might go with this crowd-pleaser that makes enough to feed a crowd! If you've never made slab pie, the beauty of it is that it makes a huge pie 🥧 with minimal extra effort than what it takes to make a normal pie. (Side Note: Don't fear the pie! If even I can make a pastry crust, you definitely can. 😘) And I don't know about you, but when I indulge in pie, it's apple for me alllll the way. 🍎🍏 . . Instagram post 2185059598599567110_193133428 #ad #tillamook_partner Not gonna lie, one of my favorite things about Thanksgiving dinner is the leftovers. 🙌🏻 Turkey 🦃 + cranberry sauce + fried sage 🌿 + lots of cheese 🧀 and really, this doesn’t even feel like leftovers. 💁🏼‍♀️ @tillamook . https://www.anediblemosaic.com/grilled-cheese-thanksgiving-leftovers-sandwich/ . #TogetherWithTillamook #thanksgiving #thanksgivingleftovers #grilledcheese #grilledcheesesandwich #cheeselover #cheeselife #f52grams #huffposttaste #feedfeed #eeeeeats
