Peanut Butter Banana Bread Whoopie Pies {7 Days of Festive Holiday Treats}

December 12, 2012 by Faith 20 Comments

Today is day two of my 7 Days of Festive Holiday Treats event, and I’d like to have something for everyone. I know this recipe will appeal to the more health-conscious. Maybe you enjoy festive baking, but want to eat a bit cleaner – something along the lines of my Skinny Caramel Macchiato Cookies? I think you’ll love these....

Skinny Caramel Macchiato Cookies

September 17, 2012 by Faith 33 Comments

Ladies, this treat is for you. Because I know that some afternoons just require a little sweet treat to perk things up.  (And afternoon coffee needs a partner, right?  ;) ) On one such afternoon when I was brewing up a pot of French press, I decided to take a peek into my pantry to see what I could nibble on along with my coffee.  As soon as I opened the door, the overwhelming smell of my favorite caramel extract wafted out.  Sadly, it had spilled (no idea how that happened!) but at least it made the entire pantry smell like heaven.  And don’t worry, […]...

Date Loaf Cake

July 20, 2012 by Faith 26 Comments

Ramadan, the Islamic holy month of fasting, has just begun; this means that for a whole month Mike and I won’t be eating or drinking from sunrise to sunset. (I will still be posting regularly though — I have quite the backlog to share with you!) The point is to teach you patience, discipline, and empathy for others who aren’t as fortunate. I have to say, it really works…food and drink (especially cold water!) never taste as good the rest of the year as they do during Ramadan....

Coconut-Chocolate Chunk Muffins {Paleo}

June 6, 2012 by Faith 31 Comments

A couple weeks ago my mom and sister came over for coffee one afternoon; snacks were a must and I was prepared with these muffins. As my mom reached for one, she asked what they were. Just give them a taste…you’ll like them, I coaxed. (I didn’t want to turn her off to them before she had even tasted them by saying they’re paleo…my mom is a healthy eater, but she’s very much a traditionalist. She hears paleo and thinks cardboard texture and flavor.)...

Chocolate Avocado Pudding {Vegan}

April 23, 2012 by Faith 43 Comments

Vegan Chocolate Avocado Pudding is lusciously rich and creamy with deep chocolate flavor…but secretly healthy! It’s not new, but on the off chance that someone hasn’t made chocolate avocado pudding I wanted to share my version. If you’re on the fence about making it, give it a try! If the fact that it’s healthy doesn’t sell you, just know that its creaminess rivals that of any chocolate pudding you’ve indulged in. (And no, you can’t taste the avocado!)  :)...

Honey-Nut Banana Muffins {Gluten-Free; Naturally Sweetened}

January 25, 2012 by Faith 32 Comments

Ever notice subtle seasonal changes in your eating habits?  I don’t just mean the gravitation towards soups in the winter and salads in the summer…these days it seems like I crave something warm and comforting all day long. Case in point, every day around 3 o’clock in the afternoon I like to make a cup of tea…it keeps me warm on these chilly January days.  And of course a little treat along with tea never hurts, right?...

Healthy Gingerbread Pancakes For One

December 5, 2011 by Faith 31 Comments

Healthy Gingerbread Pancakes for One are a fun and festive way to start the day! I know, I know…it’s the holidays, what am I doing remaking a couple of classically indulgent recipes (gingerbread and pancakes) into healthy fare? I think it’s all about the little choices we make on a daily basis…the way we eat most of the time determines how we get to indulge the rest of the time....
