Mini Maple-Cinnamon-Walnut Turnover Cookies

This year I wanted to come up with a healthier holiday cookie that doesn’t necessarily taste healthy. Something that I could serve to my family for dessert along with tea and coffee at one of my parents’ family dinners and have people be satisfied with dessert – not left wanting something else.

I’ve been in the mood for Ma’amoul, which are Middle Eastern filled cookies. Perhaps the most common filling for these cookies is dates, but my mother-in-law also makes versions with walnuts and pistachios. For the walnut, she makes two different flavors: 1) cinnamon and 2) rose and orange blossom water-scented. The cinnamon-walnut are my favorite (even rivaling the date-filled for me).…

Meals in Minutes — Fruit, Cheese, & Nut Plates

March 6, 2011 by Faith 28 Comments

Clockwise From the Top:  D’Angou Pear, Almonds, Dried Figs, Multigrain Crackers, and Babybel Cheese I feel like it’s been forever since I’ve shared a Meals in Minutes recipe…not because I’ve stopped eating them, but because my meals on the go haven’t really been all that exciting lately!  This one is definitely an exception though.  Not only is it super fast to put together, but it’s also a really pretty spread and easy to eat if you find yourself having to work through lunch....

Black Forrest Bran Muffins

January 31, 2010 by Faith 29 Comments

My favorite muffins are chocolate chip, and I especially love the chocolate chip muffins at Tim Horton’s.  They’re moist, soft, and cakey with just the right amount of chocolate and a crunchy, sugar top.  Sadly, my favorite Tim Horton’s chocolate chip muffins have a whopping 430 calories each, not to mention 40 grams of sugar and only 2 grams of fiber (you can get their full nutritional profile here).    I can’t say that my Black Forest Bran Muffins are as cakey and delicious as the muffins at Tim Horton’s, but then again cake under the guise of a muffin probably shouldn’t be part of […]...

Meals in Minutes & Sweet & Nutty Salad, Any Way You Like

January 14, 2010 by Faith 16 Comments

The other day Mike and I were talking about post ideas for my blog when he came up with a fantastic suggestion.  I was telling him that a lot of my recipes are pretty long and I wanted to start sharing some quicker ones, when he reminded me that most of my lunches (as well as some of my dinners) are made in a matter of minutes.  Plus they’re usually healthy, filling, and pretty tasty.  Mike suggested I do posts on some of my blogworthy lunch recipes and call them “Meals in Minutes.”  (Isn’t he adorable?!)  I thought it was a great idea, so I’ll […]...

Salted Pretzel Toffee

December 13, 2009 by Faith 30 Comments

If you’re going to do something wrong, make sure to do it right…you know what I mean…like if you’re going to “take a break” on your diet, do it with triple chocolate cheesecake instead of a Hershey’s bar.  Or if you’re going to skip work for the day, go to the beach or shopping instead of cleaning the house.  Or if you’re going to buy (another!) pair of shoes, why not make them Manolos instead of Payless?  (You’d be surprised at the deals you can find on eBay! ;) )  If you’re going to indulge during the holidays, why not indulge in salted pretzel toffee? […]...

Cookbook Review & Recipe For Lifestyle Bars

November 15, 2009 by Faith 32 Comments

Check out Brandy’s fantastic recipe for Pear Crisp with Vanilla Brown Butter…don’t forget to get your Thanksgiving-themed recipes ready to submit to All Through the Year Cheer later this month.  There will be a great prize! Book Review:  Eat Clean Cookbook by Tosca Reno:  Recently, I was lucky enough to receive a copy of Tosca Reno’s Eat Clean Cookbook to review.  The book is nicely organized by recipe type, and it even includes a chapter called “Baked Goods and Treats” (oh yes, you can eat clean and still enjoy delicious confections like tofu crème brûlée, carrot cake, chocolate walnut brownies, and rice pudding!).    This is […]...

Caramel Apple Oats

July 20, 2009 by Faith 12 Comments

I love summer for so many reasons, one of them being the carnivals/fairs/amusement parks and the carnie food that corresponds.  The food smells wafting through the air are the best part of the carnival…sausage/peppers/onions, corn-on-the-cob, grilled chicken, cotton candy, funnel cake, fried dough…need I go on?  One of my favorite summer food indulgences are caramel apples topped with nuts.  Of course you could eat a caramel-nut apple from the carnival and justify it to yourself (hey, it is basically an apple), but why wait for the carnival, or even summer for that matter?  You can enjoy caramel apple oats any time!     Caramel Apple […]...

Fruit & Nut Granola

July 12, 2009 by Faith 15 Comments

This recipe is really versatile, since you can add any kind of dried fruit, nuts, and cereal you like.  This granola is great by itself, with milk, with yogurt, on ice cream, or even on top of your morning oats (it doesn’t get much better than oats on top of oats!).  :)   Mixed Berry and Almond Granola   (Yield:  About 10 c)   4 c rolled oats ¾ c honey 6 TB salted butter or canola oil (if using canola oil, add ½ tsp salt) 2 TB virgin coconut oil ~1 tsp cinnamon (more or less depending on your taste; you could also use pumpkin pie […]...

Almond Joy Oats

June 30, 2009 by Faith 10 Comments

Who needs dessert after dinner when you can eat it for breakfast?  I’ve always loved oats, even as a kid, but when I think of them I usually think of, well, something oaty…something for horses…something nutritious and chewy/mushy and not too full of flavor but great with a little honey and milk or cinnamon and brown sugar.  The days of boring oats are gone.  Through much inspiration and experimentation I have learned that oats can be anything you want them to be.   These oats (as the name implies) were inspired by the candy bar, Almond Joy.  They’re subtly sweet from banana, creamy from being […]...
