Red Rice Recipe with Grapes and Pistachios

September 17, 2018 by Faith 1 Comment

Using the pilaf cooking method to make this Red Rice Recipe with Grapes and Pistachios brings out the natural nuttiness in rice; this recipe features a balance of sweet and savory flavors, as well as various contrasting textures.

Red Rice Recipe with Grapes and Pistachios on Wooden Table

When I lived in the Middle East, I learned the pilaf method of cooking rice. In this method, before cooking rice is soaked in tepid water to remove the excess starch, and is then toasted in ghee (clarified butter). Sometimes onion and/or small thin pasta is also toasted along with the rice (think Rice a Roni-style). The rice is cooked in salted water or seasoned chicken broth, which lends depth of flavor. Once you try rice prepared this way, you’ll be surprised at how flavorful it can be. (I included several rice recipes that use the pilaf cooking method in my cookbook.)…

Orange and Toasted Almond Saffron Rice Pilaf with Golden Raisins

Orange and Toasted Almond Saffron Rice Pilaf with Golden Raisins with Persian-Inspired Cornish Hens

Aromatic with orange and spices, this Orange and Toasted Almond Saffron Rice Pilaf with Golden Raisins is the perfect balance of sweet and savory! The secret ingredient that takes it over the top is a little splash of orange blossom water right before serving. In keeping with my exotic, intimate holiday meal, this one of the side dish stars of the show. Some kind of pilaf is a necessary component along with my Persian-Inspired Cornish Hens with Pomegranate Walnut Sauce; it acts as a bed to soak up all that glorious stew-like liquid....

One-Pot Brown Rice Pilaf with Chicken Sausage, Mushrooms, and Rosemary {Gluten-Free}

December 7, 2016 by Faith 6 Comments

One-Pot Brown Rice Pilaf with Chicken Sausage, Mushrooms, and Rosemary {Gluten-Free} is a fuss-free comforting fall meal that’s perfect for entertaining with! And it’s easy to double if you’re feeding a crowd. There’s no rule that says holiday entertaining has to be a fancy five-course meal, or has to involve some kind of roast along with an elaborate spread. Sometimes simple and rustic food is best, especially for a last-minute gathering of close family and friends....

Jewel-Toned Sweet and Savory Basmati Rice Pilaf with Pomegranate

December 17, 2015 by Faith 12 Comments

Jewel-Toned Sweet and Savory Basmati Rice Pilaf with Pomegranate is an impressive-looking side dish that’s easy to make and pairs well with just about anything! I grew up with traditional holiday side dishes like mashed potatoes, stuffing, candied yams, and green bean casserole. They were ubiquitous at every holiday dinner, and I (more or less) enjoyed them all. These are the classics that, for me, harken back to my first holiday memories, so they’ll always feel special, but now I’m ready for a little bit of a change. Or at the very least, I’m ready to incorporate a couple fresh new side dish ideas into […]...

Breakfast Pineapple and Pearl Barley Pilaf

September 11, 2015 by Faith 10 Comments

This Breakfast Pineapple and Pearl Barley Pilaf will fuel up your morning! One of the nice things about the change of weather (which hasn’t happened in full force yet here in Northern Virginia, but the temps have definitely started to cool down pleasantly), is that there are less bugs. Now, let me say, although ants in my kitchen are enough to send me into a two-hour cleaning frenzy and I really can’t do camping because of how much I hate the fact that I can never just get clean, bugs never really bothered me much. That is, until I got to Virginia. Here we might […]...

Millet Pilaf with Roasted Carrot + Fennel

April 29, 2013 by Faith 16 Comments

Millet is one of those things that doesn’t get a lot of action on the dinner table; actually, it’s probably more likely to be found in your birdfeeder. But (I’m going to try to convince you that) it’s a wonderful addition to mealtime too....

Golden Raisin Chermoula Chicken with Bulgur Pilaf

September 29, 2010 by Faith 41 Comments

Chermoula is a marinade or sauce used in Moroccan and other North African cuisines; it is typically used on seafood, but also may be used to flavor chicken and other meats.*  Chermoula usually contains garlic, oil, herbs (frequently cilantro), lemon (I’ve seen both pickled lemon and/or lemon juice used), and spices (such as cumin, paprika, and/or cayenne pepper).  The bright, fresh flavors in chermoula add a vibrant, refreshing quality and punch of flavor to whatever dish it’s used in.  I made a few changes to the traditional chermoula to really make this lovely condiment my own.  I added golden raisins for a little sweetness and instead […]...

Ramadan, Recipe for Pilaf-Style Biryani, & Giveaway Winner!

August 15, 2010 by Faith 33 Comments

The Islamic fasting month of Ramadan is upon us again!  This is a time for prayer, reflection, giving charity, and fasting.  During Ramadan, fasting includes not only abstaining from food and water, but it also includes abstaining from swearing, gossiping, arguing, etc.  During Ramadan fasting is done from sunrise to sunset to teach you patience, discipline, and empathy for others who aren’t as fortunate. Each day at sunset the fast ends with prayer and then the fast is broken with dates and water.  This is followed by a meal called iftar, which usually starts with a first course of soup (traditionally Red Lentil Soup) and […]...
