Close Up of Vanilla Pineapple Popsicles Recipe

A while ago when a friend brought me back wood apples from Sri Lanka, she also brought me another sweet treat: pineapple!

If you’re a pineapple fan, I highly recommend getting your hands on the Sri Lankan variety because you will be in heaven. It’s the ultimate when it comes to pineapple.…

Pina Colada Smoothie

Healthy Pina Colada Smoothie with Fresh Cherry and Yellow Umbrella Garnish

This sweet and creamy Pina Colada Smoothie recipe is a delicious, healthy mocktail style smoothie, and it’s easy to make into a cocktail with a little rum! Who doesn’t love a good Piña Colada, right? It’s a sweet fruity taste of the tropics that will transport you to a virtual paradise. This drink was invented in San Juan, Puerto Rico in the 1950’s. And the first sip of a Pina Colada takes you to its birthplace! It conjures up images of palm trees, white sand beaches, pristine ocean water, and a blue sky studded with puffy white clouds....

Pina Colada Green Smoothie (Vegan)

Green Pina Colada Smoothie Front View

Packed full of nutrition, this vegan Pina Colada Green Smoothie recipe will make you think you’re on a beach in paradise! It’s a great way to get your vegetables in, but all you’ll taste is sweet pineapple and coconut. The first time I had a real Pina Colada was on a beach in Thailand. It was served in a coconut shell, and I still remember how refreshing it was as I lay in the sun with my feet in the sand reading a book. For me, a Pina Colada represents vacation! And Green Smoothies represent busy days when I want to get a lot of […]...

Hawaiian-Inspired Pineapple Jalapeno Teriyaki Relish

Hot Dogs with Hawaiian-Inspired Pineapple Jalapeno Teriyaki Relish on Blue Background Top View

Hawaiian-Inspired Pineapple Jalapeno Teriyaki Relish is a great balance of sweet and tangy flavors; it’s delicious on hot dogs or just about any type of grilled meat, or scooped up with tortilla chips! How long has it been since you had a great hot dog? Every so often I get a hardcore craving for a dog with “the works”, the way I used to eat it as a kid: ketchup, mustard, relish, and white onion. (As much as I love cheese, there is just no place for cheese on any hot dog of mine…and for me that goes double for chili, lol.) Like pizza, hot […]...

Almond Butter Chicken Stew with Pineapple-Mint Relish {Whole30}

February 29, 2016 by Faith 15 Comments

Almond Butter Chicken Stew with Pineapple-Mint Relish is a paleo and Whole30 compliant meal! I’ve been making variations of this lovely stew for literally years now. Sometimes I’ll add pineapple right into the stew, and sometimes I’ll sprinkle on a little Vanilla-Scented Toasted Coconut-Cashew Mix on top. Occasionally I’ll skip the greens (but I admit, I much prefer this with greens added!), and if I’m feeling adventurous I’ll use mustard greens, collard greens, or chard instead of kale. No matter what unique twist you put on it, you can’t go wrong with this meal....

Pineapple Black Bean Salad with Pomegranate Arils and Coconut Chips {Vegan}

February 15, 2016 by Faith 5 Comments

Vegan Pineapple Black Bean Salad with Pomegranate Arils and Coconut Chips is a delicious balance of sweet and savory flavors! Mike and I are currently in London, on a quick little whirlwind of a trip. Before we left when we were putting together a list of things we wanted to see, I asked Mike what he was looking forward to most. His reply: the food. Yeah, that sounds about right....

Breakfast Pineapple and Pearl Barley Pilaf

September 11, 2015 by Faith 10 Comments

This Breakfast Pineapple and Pearl Barley Pilaf will fuel up your morning! One of the nice things about the change of weather (which hasn’t happened in full force yet here in Northern Virginia, but the temps have definitely started to cool down pleasantly), is that there are less bugs. Now, let me say, although ants in my kitchen are enough to send me into a two-hour cleaning frenzy and I really can’t do camping because of how much I hate the fact that I can never just get clean, bugs never really bothered me much. That is, until I got to Virginia. Here we might […]...

Piña Colada Banana Bread

August 24, 2015 by Faith 12 Comments

Banana bread-lovers, this Piña Colada Banana Bread is a must-try if you enjoy the tropical flavors of pineapple and coconut! I’m weird in that I don’t like bananas much. I buy them for two reasons: 1) they’re one of my hubby’s favorite fruits (not surprising, since we have pretty much opposite tastes in food), and 2) to let them ripen to near-rotting (yup, I love them super sweet) and either freeze them to use in smoothies or make banana bread. See? I’m weird....

Caramelized Pineapple Grilled Cheese with Honeyed Walnuts

April 27, 2015 by Faith 26 Comments

What’s up with the pineapples on houses everywhere?, either Mike asked me or I asked him when we first moved to Virginia. Because they literally are everywhere…we noticed them carved or engraved on mailboxes, porches, doorways, doorknobs, door knockers, and welcome mats, and that’s before you even get inside. Once inside a traditional Southern house, you may notice a pineapple design integrated right into the house (for example, carved into fireplace mantels), as well as throughout the décor (like in paintings and carpets)....

Thai Pineapple Fried Cauliflower “Rice” with Chicken

February 27, 2015 by Faith 5 Comments

There’s nothing better than a home-cooked meal in the middle of the day when you’re at work. (It beats the heck out of a quickly thrown-together sandwich or fast food from the drive-thru any day!)...

Pelmeni are Russian meat dumplings frequently serv Pelmeni are Russian meat dumplings frequently served with a dollop of sour cream and a sprinkling of fresh dill. You can boil or fry them, they freeze like a dream (and they cook directly from frozen!), and they make a big batch so you’ll have a freezer stash of easy dinners for busy nights. But fair warning, these are definitely a labor of love. I made them last spring on a Zoom call with ma chérie Evelyne of @cultureatz that involved ridiculous amounts of laughter, and the shenanigans of us hand making about 100 dumplings each! I’m definitely a bad blogger for not sharing the recipe until now lol. But it’s (finally!) up and you can check it out on @anediblemosaic 🥰 —> https://www.anediblemosaic.com/pelmeni-recipe-russian-dumplings/ #dumplings #dumplingsfordays #russianfood #pelmeni #foodstyling #foodstylist #foodphotography #photography #moodygrams #lightandshadow
The other day Dan and I were at an antique store a The other day Dan and I were at an antique store and we happened to find one of the vendors who was putting out #vintage #valentinesday cards she had found in one of her storage units. 💌 These are from the 1930s/1940s! She was a third generation antique dealer and she said she still has several full rooms to sort through! (I love the treasure hunt of that, it’s like exploring in your grandparents’ attic.) Anyway, I had to buy a couple cards because they’re completely charming. #happyvalentinesday, lovelies. 🥰 #valentines #romantic #flatlay #valentinesmood #vintageprops #propstyling #propstylist #photography
#ad If you’re looking for a romantic meal to mak #ad If you’re looking for a romantic meal to make for your sweetheart for Valentine’s Day this weekend, you’ve come to the right place! This meal is easy, fast (no one will guess it whips up in less than 15 minutes!), and impressive. And soooo good. 🥰

What’s on the menu? Pan seared chicken in a savory cream sauce. Steamed green beans. And Fresh Blends Ready to Cook Idaho Potatoes!

Let’s talk sides first. Steamed green beans are easy, and they round out the meal well. Or you could go with broccoli if you want.

The real star of the side dish show are these flavorful @eagleeyeproduce potatoes! They’re family grown in Idaho. Fresh-cut, never cooked, never frozen, with no preservatives. And they cook up easily with a one-step cooking process (just 8 minutes in the microwave, or you can do them on the stovetop to get them crispy). Check out their website to find their store locator to see where they’re available near you --> https://eagleeyeproduce.com/store-locator/

And now the chicken! Inspired by the famous “Marry Me Chicken”, this recipe checks all the right boxes and has all the bells and whistles. Chicken cutlets cook up quick on the stovetop, and then a luscious cream sauce flavored with garlic, fresh herbs, and sundried tomatoes cooks in the same skillet. Take a look at the recipe in the comments below.

Who says a beautiful, romantic meal has to be complicated, right? ❤️

This small batch recipe of Red Velvet Cupcakes is This small batch recipe of Red Velvet Cupcakes is the perfect dessert for you and your sweetheart this Valentine's Day, and it's even more special because it was made for a cause. ❤️

This is the 5th year in a row that Julie from @thelittlekitchn has organized the Cookies for Kid's Cancer Valentine's Event to raise money and awareness for childhood cancer, and I'm honored to be part of it.

Cancer is the top cause of death of children by disease in the U.S. There are 40,000 U.S. children actively battling cancer right now. And the National Cancer Institute’s budget for childhood cancer is less than 4%.⁣
⁣
You can help make a difference by donating to @cookies4kids. Our goal is to raise at least $3000. Thank you to @OXO, @Mediavine and @Dixie_Crystals who have each pledged to match our donations raised through this campaign up to $3000!⁣
