What I Ate Wednesday #2

February 22, 2012 by Faith 16 Comments

Breakfast, Part 1 (pre-workout):  Cottage cheese (I really wasn’t kidding when I said I eat it every day ;) ) This is my second time participating (here is my first) in Jenn’s What I Ate Wednesday and this month is all about loving your veggies…fun, right?  I knew right away that I wanted to participate.  If you’re a food voyeur (I know I am), dig right in!...

Stuffed Tomato Salad

August 10, 2010 by Faith 34 Comments

Campari tomatoes are deep red, round tomatoes that are usually sold on the vine.  They’re sweet and juicy and I think they taste a lot like cherry tomatoes (they also look similar to cherry tomatoes, only larger).  Campari tomatoes are the perfect tomatoes for stuffing because in addition to their great flavor, they’re big enough to get a decent amount of filling inside. The filling I use in this recipe is a combination of three cheeses (mozzarella, Parmesan, and cottage cheese), which I puree until smooth.  The end result is a cheesy mixture with a consistency similar to ricotta, but much more flavorful.  If you’re […]...

Layered Green Salad

March 19, 2010 by Faith 29 Comments

I want to give a huge thank you to my very sweet friend Karyn of French Charming.  Karyn’s blog is full of beautiful eye candy and nourishment for the soul too.  Karyn’s positive outlook and inspirational ideas always bring a smile to my face.  She is one of the most truly genuine bloggers I have had the pleasure of coming across, and reading her blog feels like catching up with a very dear friend.  In addition to all of this, she is amazingly generous (she recently hosted 5 fabulous giveaways for 5 days in a row!).  Karyn recently sent me a stunning tote bag that […]...

Cobb Salad

October 3, 2009 by Faith 16 Comments

There are several stories as to the origin of this salad.  Legend has it that this salad was dreamed up as a late night snack either by or for Robert Cobb of the Brown Derby restaurant in Hollywood; supposedly, items where just pulled out of the fridge, chopped up, and put together in a salad.  When I was younger I always thought it was called Cobb because it’s arranged in rows just like the kernels of corn on a cob.  As lovely as this salad is, my favorite way to eat it is all mixed up.  So why bother to arrange it in such beautiful […]...

Making a Restaurant-Quality Meal For Any Occasion

May 11, 2009 by Faith 2 Comments

The Dilemma: I think many people out there suffer from the same quandary that I did – no new ideas for Mother’s Day gifts.  Of course there are the usual stand-bys (such as flowers, chocolates, gift certificates, etc.), but they get old fast.  The Start of Something Good: For Mother’s Day 2006 I wanted to come up with a unique way of showing my mom just how special she is to me, so I decided to make a restaurant quality meal and serve it in a restaurant quality atmosphere, at home.  Now I have to tell you I’m no chef at all.  I have no […]...
