Recently finding myself with a lone sweet potato in my fridge and hoping for some inspiration, I did a quick search on my site to see what sweet potato recipes I’ve shared with you. Friends, I am hanging my head in shame....
Masala Curry Butternut Squash Soup Review and Satay-Inspired Turkey Grilled Cheese with Nutty Masala Sauce Recipe
Moving to Kuwait has shown me that words I thought I understood the meaning of actually have a much more relative definition. Like “soon”. As in We’ll be over soon, we’re on our way now! Three hours and as many pots of Turkish coffee later, it’s apparent that “soon” has a different meaning here, lol. (And since you literally can drive from one end of Kuwait to the other in that amount of time, it also becomes apparent that unless they were either in Iraq, Saudi Arabia, or somewhere on the Persian Gulf, they in fact were not on their way.)...
Smoky Roasted Cauliflower Soup with Herbed Chickpea Dumplings {Vegan; Grain-Free; Gluten-Free}
This soup is full of surprises. For starters, if you’re not crazy about cauliflower (no worries, we can still be friends…I had a bad experience a while back and I went through a cauli-averse phase myself…so I get it), this soup might win you over. The broth is off-the-charts flavorful, and by association the cauliflower is pretty fantastic too. Another surprise, if you’re a big meat eater, you might not miss meat even a little with this hearty soup. The herbed chickpea dumplings are not only rich in fiber and protein, but they kind-of look like meatballs so your eyes might start to play tricks […]...
Roasted Cauliflower Soup with Spicy Peanut Butter Crème
When autumn rolls around, there are little things more comforting than a flavorful, hearty bowl of soup. This one is thick and rich, but also veggie-laden with olive oil-roasted cauliflower, onion, and garlic as the base....
Nourishing Barley Soup with Homemade Stock
Do you remember a while ago when I posted my recipe for Homemade Lamb or Beef Stock? It was way back at the end of last September when nights had just started getting chilly around here. I thought I had used the last of that beautiful stock in a stew last month, but I just found a quart of it tucked away in my freezer. (Yup, stock lasts that long in the freezer. A sure-fire way to tell if it’s still good is to let it thaw and then smell it before using – you will know if it smells “off”; as a general rule, […]...
Thai-Inspired Pumpkin Soup
At the beginning of fall I can’t wait for all things pumpkin. Then there inevitably comes a point when Ooh, pumpkin soup! turns into Oh…pumpkin soup. I’m not quite at that point yet (I’m a die-hard fan…still can’t get enough Sugar-Free Pumpkin Spice Syrup!), but if you are, this soup is for you. (Really…I wouldn’t steer you wrong.) It’s less like pumpkin soup and more like peanut-y satay sauce. And I don’t know about you, but the sauce is my favorite part of satay....
Roasted Carrot-Apple Soup with Paprika Brown Butter
For about two years now I’ve been hearing the same mantra from one of my favorite foodie friends (who unfortunately isn’t a blogger – but perhaps one day!). Come on, everyone is doing it!, she coaxed. You know you want to! Grab some butter and don’t look back!...
Homemade Lamb or Beef Stock
I have to give it to you straight on this one. Making stock isn’t the prettiest job. There are bones and/or carcasses to deal with. And skimming scum (ugh, that word is especially not pretty…but that’s really what it’s called!) off the top of a simmering pot of liquid that is best described as looking like murky pond water. And the fun continues into the next day with skimming the fat off the top of the cold gelatinous stock. It’s not pleasant, not in the slightest....
Buffalo Chicken Soup
This chowder-like Buffalo Chicken Soup is thick and creamy with all the flavor of Buffalo chicken wings, but without the mess! Ahh, soup season. I’m in love, and not just because I love soup. I can barely control my feet as they do a little happy dance every time they snuggle into my wool socks....
Cabbage, White Bean, and Sausage Soup
One of my favorite things about winter is making soup, and even though I make it a lot, I make so many different kinds that we never get sick of it. Cabbage soup – in any of its variations – is one of my favorites....
