Spinach Strawberry Salad Recipe

April 29, 2019 by Faith 1 Comment

Spinach Strawberry Salad is a healthy, delicious lunch recipe that makes great use out of fresh, sweet, and juicy local strawberries! It also makes a quick side salad for summer dinner and goes well with anything you grill up.

I’m always surprised at how many people tell me they don’t like salad because it’s boring! I guess that depends on what you put into it. I mean, if it’s just a bowl of leaves I would consider it rabbit food too, lol.

But salad doesn’t have to be that way. With a variety of sweet and savory flavors, creamy and crunchy textures, and a quick homemade vinaigrette to pull it all together, my Spinach Strawberry Salad is anything but boring!…

Greek Turkey Burgers with Easy Homemade Tzatziki Sauce

July 22, 2016 by Faith 5 Comments

This recipe for Greek Turkey Burgers with Easy Homemade Tzatziki Sauce is a fun fusion of basic burgers and Greek Spanakopita for a fresh new weeknight meal idea. It’s packed with the flavors of garlic, spinach, pine nuts, and feta! It’s very rare that we actually make burgers at home. They usually take the backseat to grilled steak or BBQ chicken. If we’re craving a burger we usually hit up Smashburger (if my hubby is choosing) or Shake Shack (if it’s my turn to pick!)....

This is my go-recipe when I want to get extra veggies involved in breakfast (or brunch or brinner, for that matter)....

Lentil Soup with Spinach and Mini Chicken Meatballs {Gluten-Free}

April 2, 2014 by Faith 8 Comments

Sometimes spring is obvious (like when temps go from 35 degrees to 55 degrees overnight and melt three feet of snow), and sometimes it isn’t quite so obvious (like when temps raise just a degree or two over the span of an entire month). And then there are times when spring needs a little coaxing…like when it snows two feet in the span of two days at the end of March/beginning of April....

Healthy Shamrock Shake {Mint-Flavored Smoothie}

March 15, 2013 by Faith 39 Comments

I’ve never had a real Shamrock Shake, and by “real” I mean one from McDonald’s. Even though my shake is a knock-off, I’m guessing it has more real ingredients than the McDonald’s version… A lover of all things mint, I decided to re-do the Shamrock Shake into a breakfast-worthy meal that’s perfect for St. Patrick’s Day, or any day you want a sweet but healthy start....

Breakfast Tostada {With Spinach + Hummus}

February 25, 2013 by Faith 32 Comments

So, about bananas. I’ve been buying them like crazy because Mike’s on one of his breakfast kicks (remember his orange phase?). Lately he’s been eating a banana a day for breakfast, but until about a week ago he refused to touch a banana that had a single brown spot on it. Even just the slightest hint of a brown spot and he wasn’t having it....

Spinach-Mozzarella Grilled Cheese

April 27, 2012 by Faith 23 Comments

With all the amazing looking grilled cheese recipes that have been floating around the internet recently you probably know that April is National Grilled Cheese month. I had no idea that such a thing existed until the lovely Jo-Lynne (of Musings of a Housewife) asked me if I wanted to create a grilled cheese recipe in honor of the occasion. (Of course I said yes. :) )...

Spinach, Ricotta, & Portobello Gratins

January 13, 2012 by Faith 22 Comments

I had a couple of beautiful portobellos in my fridge and I was going to make them into giant stuffed mushrooms…but, there are a million recipes out there for stuffed mushrooms and you probably don’t need another.  (Plus I was in the mood for something a little different!)  I thought the mushrooms would also make the perfect base for individual gratins so I decided to do that instead....

Spinach & Bulgur Wheat Stuffed Red Peppers {Vegan}

December 9, 2011 by Faith 25 Comments

To everyone who took the time to read my last post, comment on it, send me an email, or message me on Facebook – thank you!  I was so nervous about publishing that post, but I can see that it was worth it.  Your kind thoughts, comments, and gestures mean the world to me.  XO, Faith Moving on to some food…  ;) About a month ago Mike asked me if I secretly became a vegetarian.  I had to laugh because I know what he’s talking about…but no, really I haven’t (I almost wish I could, but sometimes I just crave a good burger, you know?  […]...

Pasta with Creamy Pumpkin-Sage Sauce, Spinach, and Chicken

October 9, 2009 by Faith 18 Comments

I got the inspiration for this recipe from a 30 Minute Meal show (you know, the cooking show with Rachael Ray?) a few years back (when I used to regularly watch the show).  Although I didn’t make it at the time, this recipe looked good to me then and stuck in my mind, just waiting for the perfect time to be made.  I made a few changes to healthy it up a little (by using puréed milk and cottage cheese instead of cream and chicken breast instead of sausage) and round it out into a more balanced meal (by adding baby spinach), and it was wonderful!  I […]...
