In 10th grade at my high school, health education class was mandatory for all students. In my class, there was a kid named Tim. Tim was a nice enough kid; the sporty type and on the hockey team, but not necessarily overly health-conscious. Every morning the teacher would ask Tim what he had for breakfast. Some days it was cereal with milk, some days it was eggs with toast. (I don’t remember beyond that because honestly, the only one who seemed to be completely enthralled with finding out what Tim ate every morning was the teacher.)...

This is the Fudgy Walnut Spread thinned out with a little milk. It’s very ganache-like, and in addition to being a delicious spread, it is also wonderful as a frosting for cupcakes! Every once in a while I get a really good idea that just seems to fall into my head (usually via a dream…and yes, that really happens, lol), or fall into my lap (usually via a kitchen mishap). This recipe was sort-of the latter. It started with a big bag of beautiful walnuts that I received from a lovely blog reader, Letty. (Thank you, Letty…the walnuts are incredible!)...

A while ago found myself gifted with five pounds of carrots. I wanted to make something unique and special with the carrots, and as I hemmed and hawed on what to make, they weren’t getting any fresher. Meaning, I had to think of a way to use a significant amount of carrots and I had to do it fast. I had a party coming up and I knew just what to do.
