Harvest Kale Salad with Roasted Acorn Squash, Toasted Hazelnuts, and Apple-Cinnamon Vinaigrette {Let Them Eat Kale Cookbook Giveaway}

September 29, 2014 by Faith 31 Comments

Harvest Kale Salad with Roasted Acorn Squash, Toasted Hazelnuts, and Apple-Cinnamon Dressing

From first bite, I’ve always been a kale-lover, but that might be because the first time I had it I was an adult. (My mom has a serious dislike of all leafy greens so she literally never made them – not once! – for my sister and I growing up. But don’t worry, we weren’t veggie-deprived! She was still of the strict belief that every meal should include a vegetable.)…

Butternut Butterscotch Latte

December 2, 2013 by Faith 27 Comments

I’m sure this happens to you too. Every once in a while I think of an idea that is so simple, so right in front of my eyes, it astounds me that I didn’t think of it sooner. Like my Stuffed Mushroom Casserole, which I could talk about for an hour nonstop. But I’ll stay focused. This Butternut Butterscotch Latte is also the perfect example. You could think of it as the cousin to the Pumpkin Spice Latte…but the cool cousin. The one who moved away to the big city and does raw juice diets three times a year and practices yoga every day....

Butternut Squash-Topped Cottage Pie

November 29, 2013 by Faith 12 Comments

I never knew the difference between Shepherd’s Pie and Cottage Pie until recently; I found out, Shepherd’s Pie uses lamb and Cottage Pie uses beef. To my knowledge, both are classic British fare, and decidedly wonderful comfort food. The kind of food that makes you want to pull up a chair to a rustic wooden table in front of a crackling fire in a cozy pub and stay a good long while as you thoroughly enjoy your meal. It’s also the kind of meal you can easily whip up the day after Thanksgiving using all kinds of fabulous leftovers, and then enjoy at the end of […]...

Autumnal Afternoon Tea

October 22, 2012 by Faith 18 Comments

A couple weeks ago I hosted a cozy afternoon tea with an autumnal flair. It was so much fun and there was talk of making it seasonal affair, which I think is a wonderful idea! I’m going to be sharing the recipes I made throughout the next month or so, but for now I’m going to let the photos do the talking....

Cherry Cordials

May 23, 2011 by Faith 40 Comments

Have you ever heard of squash?  Not the vegetable, but the concentrated syrup made from fruit, sugar, and water.  Squash (also called cordial) can be made from just about any fruit you like…I happen to love cherries and had half a bag in my freezer leftover from when I made this chicken dish.  It was an unseasonably hot pre-summer day and I couldn’t imagine a better way to cool off than with this refreshing drink....

Elizabeth’s Three Squash Soup

December 17, 2009 by Faith 25 Comments

You’re probably wondering who Elizabeth is…she’s my mom!  :)  She makes the best squash soup I’ve ever had (including any that I’ve ever eaten at a restaurant).  Her recipe has the perfect touch of sweetness, and all the warm spices really highlight the earthiness of the squash.    My mom was actually on the local news because of this recipe!  Last October my mom, my sis, and I were at a local farmer’s market picking up the ingredients for this soup.  A local camera crew was there filming what they called “one of the last nice weekends of the season” (sounds crazy, I know, but […]...
