This low carb and keto friendly Creamy White Chicken Chili Recipe has two kinds of cheese and a little kick from jalapenos! It’s a great way to use rotisserie chicken, and it comes together in less than 30 minutes. I give stovetop instructions, as well as slow cooker and pressure cooker instructions.

Creamy White Chicken Chili Recipe (Beanless; Keto; Low Carb) on White Table

If you’re a chili purist, don’t avert your eyes! Yes, this Creamy White Chicken Chili Recipe has chicken…and no beans…and neither a tomato product nor chili powder in sight, lol. But I promise it’s pretty fantastic; delicious is a given, but it’s also easy to make, fun to top with whatever suits your fancy, and a real crowd-pleaser. If it makes you feel any better, think of a it as a cheesy chicken chowder or something.…

30-Minute Beef Bolognese with Herbes de Provence and Red Wine with Pasta Top View Vertical Orientation

Sonoma-Cutrer provided me with product for the purpose of this post, as well as compensation for my time. As always, all opinions expressed in this post are my own. Rich in flavor, this 30-Minute Beef Bolognese with Herbes de Provence and Red Wine is impressive enough to entertain with, but fast enough for weeknight dinner! Once cooking for yourself or for your family becomes a regular part of your routine, you find ways to make it work even on busy weeknights. Maybe it’s grocery shopping and prepping ingredients over the weekend, or maybe it’s batch cooking a couple nights a week and then eating leftovers […]...

30-Minute Sesame Beef and Snap Pea Stir-Fry Skillet Supper {And Well Fed Weeknights Cookbook Review}

October 3, 2016 by Faith 10 Comments

This paleo, Whole30-friendly 30-Minute Sesame Beef and Snap Pea Stir-Fry Skillet Supper was inspired by Melissa Joulwan’s Well Fed Weeknights cookbook; it’s full of real-food ingredients minus any icky add-ins, and it’s even better than takeout from your favorite Chinese restaurant. So, in a nutshell, Melissa Joulwan is a paleo goddess. She’s the mastermind behind the Well Fed cookbooks and not only are her recipes approachable and innovative, but they’re pretty dang amazing whether you eat paleo or not. I think we can all agree that it’s a pretty good day when you get to eat a meal that’s as insanely delicious as it is nourishing, […]...

Easy Turkey or Chicken Masala Wraps

January 15, 2016 by Faith 14 Comments

Easy Turkey or Chicken Masala Wraps are a delicious recipe to transform leftovers into a completely new meal! I don’t consider myself a food snob at all. My go-to meal when nothing sounds good is a humble egg (preferably fried, runny yolk) with roasted vegetables, or a big pile of salad greens topped with whatever leftovers I can find in the fridge....

December 4, 2015 by Faith 4 Comments

This gluten-free Easy Cheesesteak Stuffed Peppers recipe is a delicious and fast weeknight dinner! It’s a great use for leftover steak, but feel free to swap out chicken if that’s what you have on hand; I also give easy vegan and paleo options. I know it’s December and we’re in the throes of the holiday season, but I’m taking a break from the festivities for a quick minute to bring you something you’ll hopefully find useful: a 20-minute family-friendly dinner idea!...

15-Minute Turkey Stroganoff with Fresh Rosemary

November 25, 2015 by Faith 8 Comments

Leftover turkey from Thanksgiving (or a rotisserie chicken from the grocery store) helps this 15-Minute Turkey Stroganoff with Fresh Rosemary come together quickly for a delicious weeknight meal! We all know that one of the best things about Thanksgiving dinner is the leftovers. Which is actually a really good thing because after taking so much time to prepare Thanksgiving dinner, most of us are usually ready for a break in the kitchen. A delicious 15-minute dinner is right up my alley....

Stovetop Maple Chicken Hot Pot Recipe {Plus Maple Cookbook Review, Giveaway, and a Q&A with Katie Webster}

November 6, 2015 by Faith 20 Comments

This paleo Stovetop Maple Chicken Hot Pot recipe hits all the right flavor notes (sweet, salt, and spice), making it addictively delicious and a great way to showcase the versatility of maple syrup. Some of my all-time favorite food memories from being a kid involve a big stack of pancakes topped with a pat of butter and drizzled with amber-colored, sticky-sweet maple syrup. Growing up, pancakes in our house were a very rare event, saved for birthdays and holidays, which made the ordeal even more special....

Weeknight Italian-Style Beef Meatballs Simmered in Tomato Sauce {Gluten-Free} and DIY Warm Autumn Spice Room Spray

November 4, 2015 by Faith 4 Comments

This Weeknight Italian-Style Beef Meatballs Simmered in Tomato Sauce recipe comes together easily for a delicious weeknight meal. Jarred tomato sauce works well here and when you’re done, I show you how to re-purpose the empty mason jar into spray bottle for DIY Warm Autumn Spice Room Spray! Some meals are always saved for special occasions. Usually if it’s just my hubby and I for dinner and pasta is on the menu, I whip up a quick tomato sauce with browned ground beef. Meatballs in my house usually mean a special occasion, mostly because I typically don’t take the time to make them. But this […]...

Macaroni and Cheeseburger Vegetable Soup

October 12, 2015 by Faith 12 Comments

This Macaroni and Cheeseburger Vegetable Soup has all the flavors of a classic burger, but in cold-weather comfort food form. If you’ve been following my blog for a while, you probably know that I enjoy traveling. I love experiencing new cultures or even just new regions of the US, and immersing myself in the foods the locals eat. But I’d be lying if I said I don’t enjoy coming back home and returning to my routine. At heart, I’m a creature of habit, happiest in my home....
