Low Carb Unstuffed Peppers Stir Fry Bowls on White Wooden Table

When it comes to dinner, more often than not I’m torn between wanting a healthy homemade meal and needing something I can whip up quickly. Most of us can relate, right?…

Loosely inspired by Thai yellow curry, this AIP Paleo Bone Broth Cabbage Detox Soup will make you fall in love with cabbage soup. This time of year after the indulgence of the holiday season, so many of us are thinking about cleaning up our eating. Sweet and Sour Green Cabbage and Apple Sauté {Paleo; Whole30}

March 17, 2017 by Faith Leave a Comment

This paleo and Whole30-friendly Sweet and Sour Green Cabbage and Apple Sauté pairs well as a side dish with just about anything. To me, other than a shamrock-wielding leprechaun sitting next to a pot of gold under a rainbow, few things in life say Happy St. Paddy’s Day more than cabbage....

Cheater’s Salsa {Paleo; Whole30}

January 30, 2017 by Faith 6 Comments

Paleo and Whole30-friendly Cheater’s Salsa puts fire-roasted canned tomatoes to perfect use, combining them with fresh onion, garlic, jalapeno, lime juice, and cilantro for an easy sauce similar to restaurant-style salsa that comes together in mere minutes. The past three times I’ve gone to Wegmans I’ve seen a homemade guacamole and fresh salsa display front and center in their produce area. They have all the fixings you need to make your own (tomato, avocado, lime, garlic, jalapenos, cilantro), and there are also tubs of store-made guac and fresh salsa. The last time I saw that display I couldn’t resist anymore (I guess that’s the ingenious […]...

Thai-Inspired Chicken and Vegetable Detox Soup {Paleo}

January 2, 2017 by Faith 8 Comments

This cleansing paleo Thai-Inspired Chicken and Vegetable Detox Soup is packed full of both flavor and nutrients. After all the making merry that goes on during the holiday season, most of us could probably use a little TLC in the form of nutrition. After even just a couple days of less conscious eating (read: junk food indulging!) I find that I’m noticeably less energetic, more bloated, and less able to focus. I don’t like to beat myself up over it (because that just leads to a bad relationship with food and let’s be honest, ain’t nobody got time for that), but I do like to […]...

Sumac-Spiced Baked Eggs with Kale {Paleo}

December 19, 2016 by Faith 1 Comment

Paleo Sumac-Spiced Baked Eggs with Kale are just different enough to be more interesting than your average egg dish, but not so off-the-wall that they’re not a crowd-pleaser. Sumac adds a pleasantly tangy flavor that nicely compliments the earthy kale. Last Friday evening, Mike and I photographed and catered a private event. It ended up being a pretty random thing for us; a friend of a friend needed a caterer and I was recommended to cook, and as a total bonus Mike was available for photography. What was the event? A sweetheart of a guy was proposing to his girlfriend (and she said yes!) and […]...

30-Minute Sesame Beef and Snap Pea Stir-Fry Skillet Supper {And Well Fed Weeknights Cookbook Review}

October 3, 2016 by Faith 10 Comments

This paleo, Whole30-friendly 30-Minute Sesame Beef and Snap Pea Stir-Fry Skillet Supper was inspired by Melissa Joulwan’s Well Fed Weeknights cookbook; it’s full of real-food ingredients minus any icky add-ins, and it’s even better than takeout from your favorite Chinese restaurant. So, in a nutshell, Melissa Joulwan is a paleo goddess. She’s the mastermind behind the Well Fed cookbooks and not only are her recipes approachable and innovative, but they’re pretty dang amazing whether you eat paleo or not. I think we can all agree that it’s a pretty good day when you get to eat a meal that’s as insanely delicious as it is nourishing, […]...

Seared Salmon with Fresh Cherry and Charred Poblano Chopped Salad {Paleo; Whole30}

July 25, 2016 by Faith 10 Comments

This paleo Seared Salmon with Fresh Cherry and Charred Poblano Chopped Salad makes perfect use of sweet, in-season cherries for a fresh new way to dress up dinner. When I don’t feel like cooking but I still want to eat clean, salmon is what usually comes to my weeknight dinnertime rescue. It cooks up in a matter of minutes on the stovetop, and is a great base flavor just waiting to be dressed up any number of ways....

Creamy Rosemary and Red Grape Chicken Salad {Paleo; Whole30-Friendly}

May 6, 2016 by Faith 5 Comments

Creamy Rosemary and Red Grape Chicken Salad is a flavorful way to dress up ordinary chicken salad. You’d be surprised at how fast my hubby blows through an entire batch of homemade mayo. He’s always finding creative (haha!) new ways to use it. Chicken wings, roasted potatoes, and even fried eggs are all fair game. Just about the only way he doesn’t eat mayo is on a sandwich....

Almond Butter Chicken Stew with Pineapple-Mint Relish {Whole30}

February 29, 2016 by Faith 15 Comments

Almond Butter Chicken Stew with Pineapple-Mint Relish is a paleo and Whole30 compliant meal! I’ve been making variations of this lovely stew for literally years now. Sometimes I’ll add pineapple right into the stew, and sometimes I’ll sprinkle on a little Vanilla-Scented Toasted Coconut-Cashew Mix on top. Occasionally I’ll skip the greens (but I admit, I much prefer this with greens added!), and if I’m feeling adventurous I’ll use mustard greens, collard greens, or chard instead of kale. No matter what unique twist you put on it, you can’t go wrong with this meal....

Instagram post 2185880916279076048_193133428 I asked my dad what he wanted me to bring for Thanksgiving. I know my uncle is making the turkey 🦃🍽 (and probably no less than 10 side dishes lol), so I wasn't at all surprised when dad said everything is all set. I told him there's no way I'm coming empty handed (and the veggie soup I made for his freezer stash doesn't count bc it's not Thanksgiving-related!), and he told me to bring "one of those crazy keto desserts" I make. 🤣 (Apparently my crazy keto dessert reputation precedes me. 🤷🏼‍♀️😆👏🏻) I'm going to try to find time to whip up something low carb, or I might go with this crowd-pleaser that makes enough to feed a crowd! If you've never made slab pie, the beauty of it is that it makes a huge pie 🥧 with minimal extra effort than what it takes to make a normal pie. (Side Note: Don't fear the pie! If even I can make a pastry crust, you definitely can. 😘) And I don't know about you, but when I indulge in pie, it's apple for me alllll the way. 🍎🍏 . .
