Assemble the egg rolls. Lay out an egg roll wrapper. Put 3 TB of filling horizontally across the bottom 1/3. Fold both sides over onto the center of the filling and roll it up into a log, brushing the top with eggwash to seal it.
Air fry the egg rolls. Brush the egg rolls with oil. Working in batches, air fry the egg rolls at 375F for 6 minutes per side, flipping once halfway through and brushing with more oil.
