Make sure to brush the egg rolls with oil again after you flip them halfway through cooking. This helps make sure they’re super crunchy!

Assemble the egg rolls. Lay out an egg roll wrapper. Put 3 TB of filling horizontally across the bottom 1/3 of the wrapper. Fold both sides over onto the center of the filling and roll it up into a log, brushing the top with eggwash to seal it.

Air fry the egg rolls. Brush the egg rolls with oil. Working in batches, air fry the egg rolls at 375F for 6 minutes per side, flipping once halfway through and brushing with more oil.
