4 TB avocado oil or light olive oil 8 ounces ground turkey or chicken 3 cups cabbage, 1 cup carrot 5 cloves garlic, 1 TB ginger 3 scallions 1 1/2 TB soy sauce 3/4 tsp salt 1/2 tsp sugar 1/8 tsp white pepper 2 tsp rice vinegar 1 TB toasted sesame oil 12 egg roll wrappers 1 large egg white + 1 TB water

Make the filling. This mixture of meat, vegetables, and seasonings is what makes these egg rolls super flavorful!
Assemble the egg rolls. Lay out an egg roll wrapper. Put 3 TB of filling horizontally across the bottom 1/3 of the wrapper. Fold both sides over onto the center of the filling and roll it up into a log, brushing the top with eggwash to seal it.
Air fry the egg rolls. Brush the egg rolls with oil. Working in batches, air fry the egg rolls at 375F for 6 minutes per side, flipping once halfway through and brushing with more oil.
