Cut the salmon into approximately 1 1/2-inches pieces. Add the salmon, brown sugar, garlic powder, salt, black pepper, onion powder, smoked paprika, cayenne pepper, and oil to a large bowl and toss to coat.
Add the salmon pieces to the air fryer (skin-side-down if your salmon had skin) so that none of the pieces are touching. Air fry until the salmon is fully cooked, about 5 to 7 minutes.
Serve the salmon bites along with the sauce for dipping.
