Make the dough and chill.
Caramelize the onion and make the filling.
Roll out the dough, stamp it out into 3-inch circles, and press them into the wells of a mini muffin tray. Add about 1 tablespoon of filling to each well.
Bake until the crust is golden and the filling is set, about 25 to 30 minutes at 375F.
