Make the croutons.
Prep the garlic. You need to crush 2 cloves and thinly slice the remaining 18 cloves. You'll need 2 heads of garlic total.
Lightly brown the potato in fat, and then add the onion and garlic.
Add the stock and spices, and let the soup simmer until the potato is tender. Remove from the heat and stir in the crushed garlic and parsley.
Serve the soup garnished with the croutons, parmesan, and parsley.
