Prep Time: 1 hr, 30 min, plus rise time
Dough: 4 cups flour, 1/2 cup sugar 2 1/4 tsp instant yeast, 1 tsp salt 3 large eggs, 1 large egg yolk 1/2 cup milk, 1 tsp vanilla extract 1 tsp vanilla bean paste 2 tsp orange zest, 10 TB butter Chocolate Filling: 5 oz dark chocolate, 8 TB butter 1/2 cup powdered sugar 1/3 cup cocoa powder 1/4 tsp ground cardamom
Cook Time: 45 Min
Dough. Make the dough and let it rise (12 hours in the fridge overnight is perfect!).
Chocolate filling. Make the chocolate filling! It should be spreadable like Nutella.
Assemble the babka. Divide the dough into 2 equal balls, and roll each into a rectangle. Spread each with chocolate filling, sprinkle on chopped chocolate, and roll them up into logs.
Shape the babka. Cut the babka logs in half and twist the 2 halves together to form a loaf. Place them into loaf pans, and let them rise for about 2 hours.
Bake and top with simple syrup. Bake until the loaves are golden, about 45 minutes at 350F. As soon as the babka loaves are out of the oven, slowly pour the cooled simple syrup evenly on top.
